Obviously hie government thinks it's more important for us to knoWv that it's 246 kilometres to Kingston (or whatever) than it is to be able to navigate our streets safely. Why am 1 so concerned? Well, it's because I've been away for a week on holidays and on returning 1 suddenly don't know how far it is to anywhere but my street is 9till full of potholes. My first hint of trouble while returning from La ke Brie was when 1 got to Toronto and noticed it semned farther to a certain cutoff than 1 had preciously thought. Then 1 noticed a littie "km" above the sign and thought to myself' "They've gotcha!" Because 1 knew the way almost blindfolded I didn't let the stupid signs put a miiserable end to my great holiday. 1'm sure you've heard of the Peter Principle, and of course Murphy's Law of which thiis column is an excellent example but there should be somne kind of law to describe what happened recently to me and l'ni sure hias happened to other people despite themselves. Herbed Dressing Y2 cup vegetable or olive oil 2 teaspoons chopped green onion i teaspoon grated Parmesan cheese % 4cup vinegar 3 tablespoons mayonnaise 1 tablespoon lemon juice Y2 teaspoon Worcestershire sauce i teaspoon sugar i teaspoori saît ý4 teaspoon dry mustard Y2 teaspoon pepper hV teaspoon basil hV teaspoon oreganio In a blender whirl first 3 ingredients until smooth and creamy. Add remaining in- gredients; blend until smooth. Refrigerate until used. Can bc made well ahead of time. Makes about 1 cup. Summer Salad Milanese 1 head Iceberg lettuce, shredded h 2cup diagonally sliced celer>' ;V cup thini>' sliced radishes !12cup thinly sliced cucum- bers hcup coarsely chopped green pepper hcup coarsely chopped green oniofl (includiflg tops) 2 large tommtes, each eut in 8 wedges yz cup pitted ripe olives (optional) Food specialists at the it is! And that comnbined withi a terrifi dressing. 2 tablespoons finlely chopped fresh mint or i tablespoon dried mint flakes 2 tablespoons finel>' chopped parsley 3 tablespô-ons fresh lemon luice 2 tablespoons vînegar h 2cup salad oil 1 teaspoon Salt 1 teaspoon sugar hV teaspoon pepper %4 teaspoon dry mustard Toss together lettuce and vegetables. Combine dressing ingredients. Sprinkle over salad and toss. Serve imme- diately. Makes 6 servings. happened to my holidays on the shores of Lake Erie just, west of Fort Erie. The only plan was to spend a week on holidays on the north -shore of Lake Erie.. No reservations, no fussing, just leave work and gol I'm stili absolutely amazed that the whole caper went off without a hitch. 1 will admit that on arriving Monday night 1 was a bit put out to discover the campgrounds charging $7.50 a night but maybe l'in stili living in the past when I could get a hotel room for that. Anyway 1 paid and found the spot which was nestled in between two huge sand his and seemed to be in a perfect location, out of the wind. Tuesday was excellent. And Tuesday I spent a lot of timne reliving my youth at Wasage beach. It's been-over 22 years. since my fiamily has been at Wasaga beach and I fondly look back at one lazy summer spent either in the water or on the beach getting every minutes worth of Sun and en- joying every minute of it.0 There were. woods to explore, sand dunes to climb and endless waves to do battie with. There were dozens of dogs to pet, my own to walk and nveighbours to say hi to now to mention the early morning rides with the ice man "help-, ing"' him deliver his shivery product. Twenty two years later I did almost exactly the same thing except, alas, there is no more ice man, now you have to buy it at the grocery store and they nick you a buck for a littie bit when a buck in those days would buy you ice all week. 1 have flot heard people say that Lake Brie is warm water but that first day on the beach I found the water was just as warm as 1 remnember Wasaga Beach was as a kid. And just like Wasaga Beach in early days, 1 was able to park the car right on the beach, get out a little barbecue, kee.p a cooler in the car with cold refreshmnents and turn onthe radio and stretch out on a towve1. The whole happy collect- ion of memr is camne flooding back the first moment 1, took off my shoes and socks this week, stepped onto the warm sand and let it squish between my toes. Suddenly 1 was back 22 years at Wasaga Beach. Except tor Wednesday when it rained in the morning thus making a good excuse for a trip across the- lake to Buffalo and a scenic side trip to Niagara Falls, the whole week was spent on the beach getting burned to a crisp, eat- ing french fries, building sand castles and harbours for little boats and loving every minute of it. And something strange happened that took me back even further into my child- hood to when 1 used to live o n the west coast. Lake Brie has a tide. Now 1 know it isn't a tide as we think of it with oceans but the water level actually dropped during the day until there was a low tide by about 4 p.m. 1 can't explain it and 1 don't want to know about Russians and bomb testing or any of that, 1 just want to enjoy the pleasant memories of just having spent a week out of the past. Better still, I didn't plan a minute of it. Hope your holidays go as well.
