Saigon restaurant o pens By MICHAEL KNELL Free Press Staff Are you an adventur- ous dîner? If you are, there is a new eating establishment in town that should be tried. Last week, Mayor Bob Attersley officially opened the Saigon Restaurant, the only such establishment of- fering authentic Viet- Namese food in this area. The Saigon is operated by Mrs. Long Bui and Mrs. Trang Nguyen, both of whom managed to escape fromn that troubled nation prior to the communist take-over of Saigon in 1975. While it must be ad- mitted that the decor is not what one would find in an established restau- rant, the food is ex- cellent. The Saigon's menu features four traditional VietNamese dishes. Cha Glo or Imperial Rolis look similar to sausage rolis but in- stead- of pastry are wrapped in rice paper. The filling is a comn- bination of "angel hair," beef, and crab meat. Another item on the menu is Thit Bo Lui or barbequed beef which is served with steamed rice, a plain salad and Nouc Cham sauce. Thit Nuong is bar- bequed pork and is also served with rice, salad and the traditional Viet- Namese sauce. The Saigon also offers Mien Ga which is a chicken and bean thread soup. This is a light and tasty dish. QttakIju Ail of the food bas a French influence, which a spokesman for the restaurant said is due to the 100 year occupation of VietNam by France.
