It looks lilce a souffle, tastes delicious, can be prepared the day before and baked prior, to serving and it won't fail. 5 c. cubed French bread; 1½% c. cooked ham, chopped; 10 oz. pkg. chopped broccoli, thawed; 2 c. -shredded C thawed; 2 c. shredded cheddar cheese (8 oz.); 6 eggs; 3 c. miik; 1 smali onion, fineiy chopped; ½2 tsp. sait; 1 tsp. dry mustard. Grease an,8-cup deep, straight-sided 'baking dish. Layer one third each of the bread, ham, broccoli and cheese in the baking dish; repeat to make two more layers 0f each. Beat eggs with the miik, onion, sait and mustard until biended; pour over layers in the dish. Cover and refri- gerate for at least 3 hours or overnight. Bake uncovered at 350 degrees Fahrenheit for 11/ hours or until puffed Up and golden. NOTE: Other cooked mea ts or vegetables can be substituted for the ham and broccoli. Try combinations of these for other tasty strata: Ieftover turkey or chick- en, tuna, salmon, crab, bacon, mushrooms, asparagus, or ,cauii- flower. Baked Custard «(6 servings) 2 c. mîilk; 4 eggs; ' c. white sugar; 1 - -tsp. vanilla; dash sait; dash nutmeg. Preheat oven to 350 F. Heat miikç to scaiding, untii 'tiny bubbies ap- pear around the edge of the pan. Beat together eggs, sugar and sait. Stir a littie of the miik into the eggs, then slow- ly stir the egg mixture back into the remaining milk. Add vanilla. Place 6 custard cups in a large baking pan. Pour custard into cups. Sprinkle tops with nut- meg. Set baking pan on rack in oven. Pour very hot water into the pan to within 1'2 inch of the top of the custard cups. Bake for 40 minutes, or until a knife inserted near the, centre of the custard, comes out dlean. Chil. Variations: Mapie Custard: substitute '% c. maple syrup for sugar. Lemon Custard: add 1 tsp. grated lemon rind with the vanilla. Coffe Custard: stir in 1-2 tsp. 0f instant coffee when vaniiia is added. Easy Creme Caramel: pack 1 tbs. brown sugar into the bottom of each cup before adding the eus- tard mixture.
