Cover bottom of 9-inch (23 cm) springformi pan with some of the slces; stand remaining slices around edge of pan. Dissolve jelîy powder and sugar ini boîîing water ini large bowl. Stir in cran- bernies. Chili until mixture mounds from a spoon. Mean- whiîe. combine skimn milk powder and ice water in smalî mixer bowî. Beat at high speed untîl soft peaks form (3 to 4 min). Add orange juice. Continue heating until stiff peaks form (3 to 4 min longer). Fold whipped skimn miîk into cranberry mixture. Pour into prepared pan. Chili at Ieast 3 hours or until set. Garnish. Kablua 2 1/4 cups sifted ail-purpose flour 1 Tbsp. baking soda 1 tsp. sait 1 tsp. ginger 1/2 tsp. each cinnamon and nutmeg Kahlua Icing Preheat oven 350 dregrees F. Cream shortening, butter and sugars together. Beat in egg until fluffy. Stir in molasses and Kahlua. Resift flour with soda, sait and spices. Add to creamed mixture;biend well. Cover and chill 2 hrs. or longer to firm dough. On weii-floured board , gently roll dough, a portion at a time, to 3/8 in. (keeping remaining dough chilled). Dough will be tender and soften on roiiing. Cut with «5 x 4 in. floured cutter. Slip large metai spatula under cutter and dough. Lift te lightly greased coolie sheet and remove cutter. Bake about 8 min. Let stand 1 min. to firm. Cool on wire rack. Decorate with Kahlua Icing. Makes 2 1/2 to 3 dozen. Kahlua Icing: In large bowl, combine 1 lb. powdered sugar, 1/4 cup Kahlua, 3 Tbsp. each shortening and butter, and 2 tsp. light corn syrup. Tint with food coloring, if desired. Pipe to decorate cookies. Or to spread, add additionai Kahlua (1 to 2 Tbsp.).
