Canadian Bacon with WiId Cherry Glaze 2½V. to 3-pound piece Canadian bacon 1/ cup ight brown sugar 1/4 easpoon ground cinnamon ¼ 4teaspoon ground allspice 2 tablespoons cornstarch 1 17-ounce can dark sweet pitted cherries in heavy syrup I1/2 teaspoons prepared mnustard 1/2 cup Mr. Boston Wild Cherry Flavored Brandy Trim excess fat from bacon; then place fat-side up in ungreased baking dish. Roast uncovered 45 minutes in 325 O F. oven. Pour drippings from pan. While bacon roasts, prepare glaze: mix sugar, cinnamon, allspice and cornstarch in small sauce- pan; blend in juice from cherries. Cook over medium heat, stirring constantly, until mixture thickens and bouls I min- ute. Stir in mustard and Mr. Boston Wild Cherry Flave~red Brandy; add cherries. Pour sauce over partially roasted bacon. Continue roasting, basting several times, 30 to 40 minutes longer, or until thermometer registers 1600 F. Cut bacon into ¼/-inch thick slces'. Serve on heated plates with fried eggs and some of cherry sauce spooned over each serving. Stir in 1/ cup cold water. Chill until slîghtly thickened. Dissolve cherry gelatin in remaining 1i ½ cups boiling water. Chill until slightly thickened'. Combine orange sections, pinie- app'le, grapes and pecans; fold 3/ cup into thickened lime gelatin. Press tree design seal into top of Tupperware'Jel-N-Serve. Pour lime gelatin mixture into mold. Chill until set but not firm. Reserve 2 tablespoons whipped cream. Fold remaining whipped cream into thickened cherry gelatin. Fold in remaining 3/ cup fruit. S poon into mold over jelled lime layer. Seal. Chili until firm. Unmold. FilI tree design with re- servecj whipped cream. Serve. Yield: 6 to 8 servings. *Note: Use canned or cookcd pine- apple only. Fresit or frozen pine- apple contains an enzyme that wili prçvent the mixture from jelling.
