Don Luckham, Western Ontario Agricultunal School, Ridgetown, advises that dur- ing warm weather eggs should be gathered mare frequently and they shquld lie cooled as soon after laying as possible with 55' F. recommended as the mast satisfactory temperature. Eggs should libe kept at this temperature day and night and humidity should lie kept at ai fairly hig'h level as weli. The easiest method o! main- taining this temperature is to keep the eggs in the basement whene it is usuaiiy cool and damp and tempatunes do not fluctuate tao much. A home- made egg cooler is a help and can consist o! a wooden frame- work witth a water pan on top. By hanging liurlap aven the sides with ane end in the water pan the burlap wiil act as alI wick, soakingZ up the water and1 making a cool humid place ta! keep the eggs until theyare shipped. Meohanical egg coolers are also available. Everything possible should be done to produce clean eggs tiiat do neot require washing. For those that do, however, the tempature of the water is most important. It aJhou1d lie from 110-120 F . and' washing shouid take no longer than three minutes. A bit ot de- tergent added to the water- in which eRzgs are washed helps ta eut down bacterial contam- ination. Not more than three or four baskets of eggs should be washed in each lot of water and they should lie dried as quickly as possible alter wash- ing. If the washer is flot equip- ed with a thermostat, temnper- ature of the water should be watched 'very closely. Whiie the production of high quality eggs by the use of suit- able fred and good manage- nment is essential, the mainter- ance of high quaiity through proper handling and storage until timne of shipment is also very important.
