Remove roots and green leaves; use oniy the white portion. 180 g(6 ounces) leeks, white part only 1.125 L (1 quart plus 12 cup) water 6 chieken bouillon cubes, crumbled 1 bay leaf 250 mL (1 cup) evaporated skimmed milk 5 mL (1 teaspoon) Worcester- shire sauce Cut leeks in haîf lengthwise; then cut crosswise into 3-mm (1s..nch) sîjees. In saucepan, combine leeks, water, crumb- led bouillon cubes and bay le af. Bring to a boil; reduce heat and simmer until leeks are tender. Remove and discard bay leaf. Remove 30 mL (2 tablespoons) leeks and reserve. Pour remnaining ieek mixture into blender contain- er; process until smooth. Return mixture to saucepan; stir in reserved leeks, evapor- ated skimmed milk and Wor- cestershire. Heat; DO NOT BOIL. Makes 6 servings. Divide evenly. Each serving is equivaient to: 30 g (1 ounce) Limited Veg- table 1 serving Something Extra (1 bouillon cube) one-third serving Milk (41.7 mL or 2 tablespoons plus 2 teaspoons evaporated skim- med miik) Baked Ham Preheat over to 160 degrees C (325 degrees F). Trim any visible fat from ready-to- serve, fully-cooked canned ham; score by making diagon- ai cuts 3 mm (1/s inch) deep, about 2 cm .(:,4 inch) apart, across surface and sîdes of ham, in diamond shapes. Stud with cloves. Place on rack in roasting pan and bake about 12 to 15 minutes per 480 g (per pound) or until thermometer inserted in ham registers 55 degrees C to 60 degrees C (130 degrees F to 140 degrees F.) Suice, weigh portions and serve with Cumberland Sauce (see recipe). Each serving is equivalent to: 120 g (4 ounces) "Beef " group (cured) Cumberland Sauce (see rec- ipe) Cumberland Sauce 375 mL (11'2 cups) orange juice 45 mL (3 tablespoons) low calorie rhubarb strawberry spread 15 mL (1 tablespoon) prepared mustard 14 cinnamon stick 2 mL (12 teaspoon) browning sauce 2 cioves 20 mL (1 tabiespoon plus 1 tea- spoon) cornistarch, dissoiv- ed in 15 mL (1 tabiespoon) water Combine al ingredients, except cornstarch, in a med- ium saucepan; bring to a boil; lower heat and simmer 2 to 3 minutes. Remove and discard cinnamon and cioves. Add cornstarch; cook, stirring con- stantiy until sauce thiekens. Makes 6 servings. Divide Cumberland Sauce evenly over 6 servings of ham.
