Oven-Fried Onion rings Kids love onion rings, but mothers don't like themn to have aIl that fat. For a low-fat, crispy, flavorful version, try these easy oven baked rings. They're great with homemade- hamburgers. 3 onions, cut into 1/4 ich (5 mm) slices and separated into rings *1 cup (250 mL> buttermilk ¼/ cup (50 mL) alI purpose flour 1/ cup (50 mL) freshly grated Parmesan cheese 2 tbsp (25 mL) dried parsley saît (optional) 1/ tsp (I mL) pepper 1/ cup (50 mL) butter Combine onion rings with buttermilk in sturdyplastic bag, close tightly and let sit at roomn temperature for 30 minutes. Meanwhile, in another plastic bag, shake together flour, cheese, parsley, saIt if desired and pepper. In large jelly roll pan, melt butter. Drain onions in strainer and drop, a few at a time, into flour mixture. Shake to coat and place in single layer in but- ter pan. Bake, uncovered at 375 'F (190 CQ for 30 minutes or until onion rings are tender in- side and crisp outside, carefully turning over once with lifter. Makes 4 servings. Note: * 1 cup buttermilk, can be substituted with 1 cup 2% milk plus I tbsp vinegar. Let stand for approximately 15 minutes before using. Carrot Oatmeal Cookies Regardless of age, everyone loves cookies and these easy peanut-studded carrot ones will disappear in, no time. If you want to keep a few foranother time, just place cooled cookies in a waxed paper-lined airtight container withwaxed paper on top of cookies and freeze for up to 4 months. 3 medium carrots, peeled and finely shredded (about 1/ lb/ 250 g) 1/ cups (175 mL) vegetable oiù 1/ cup (125 mL) each granulated and brown sugar 1 egg, beaten I tsp (5 mL) vanilla 1112 cups (375 mL) ail purpose flour I tsp (5 mL) baking soda 1/ tsp (2 mL) grated nutmeg 2 cups (500 mL) rolled oats 23 cups (150 mL) whole salted blanched peanuts In large bowl, stir in carrots, oil, sugars, egg and vanilla. In separate bowl, stir or sift together flour, baking soda and nutmeg. Stir into carrot mixture with oatmeal and peanuts. Drop by teaspoon onto greased bak- ing sheets, flatten slighitly with floured fork. Bake at 350TF (180'C?) for 10 to 12 miinuites or until golden brow,%n. Makes 5½1- dozen cookies. Apple Crisp 5 cups apples, sliced 1 cup brown sugar 1/ cup flour 1/4 cup rolled oats 1 tsp cinnamon 1/2 cup butter Arrange apple slices in a but- tered 8"-. square pan or a 1lV quart casserole. Combine dry ingredients with butter until crumbly. Press over apples. Bake at 3500F for 40 - 50 minutes. Meat Pies Fîliing: 1 V2 lbs. ground beef I small onion, chopped 1 V2 cup dry bread crumbs 1 can beef bouillon or consomme V2 tsp. saIt '/2 tsp. pepper 1/ tsp. thyme 2 tsp. worcestershire sauce Cook beef and onion until brown. Mix bread and bouillon and let stand while beef is cook- ing. Add this mixture and rest of ingredients to meat mixture and mix well. Pastry: You may use your favouirite pastry or mix the following with your pastry recipe. l'cup grated sharp cheddar cheese V2 tsp. paprika dash of cayenne pepper To cook: Meat mixture may be poured into 9" pie plate and covered with pastry. Cook at 375'0F for 45 minutes. For small pies, plates may be lines with pastry. or the top only covered with pastry. Miay be frozen cooked or uncooked. Sweet & Sour Meathails 1/ cup vinegar V2 cup soya sauce 1/ cup brown sugar 1 cup water 1 cup pineapple juice 11 tsp. ginger Bring the above ingredients to a boil., 2 lbs. hamburg 2 eggs 1 V2 cup fine bread crumbs saIt pepper Mix and 'form into small meatballs. Add to sauce, cook slowly until done. Remove meatballs and add 1 can of mushrooms and pineapple chunks. Boîl liquid and add cor- nstarch to thicken.
