Frozen Orange Juice Concentrate, Concentrate, thawed 50 mL (1/4 cup) Raisins 125 mL (i/ 2 cup) Shredded Shredded Coconut 125 mL (1/2 cup) Chopped Chopped Walnuts 125 mL (1/2 cup) Soft Butter 250 mL (1 cup) Firmly packed Brown Sugar 1 Egg 1. Combine flour, All Bran or Bran Buds, rolled oats, seseame seeds, baking powder, soda, salt and lemon peel. Set aside. 2. Mix together orange juice, raisins, coconut and walnuts. Set aside. 3. Cream butter and sugar; add egg and beat until light and fluffy. Stir in flour mixture. 4. Press half of the dough into a greased 2 L (8") pan. Spread the fruit mixture over the dough, then press remaining remaining dougn on top. 5. Bake in preheated oven at 180 degrees C (350 degrees F) about 30 minutes or until done. The flavour blends smoothly with potato, onion and curry. 50 mL butter 125 mL frozen diced onions 1 large potato, finely diced 250 mL chicken stock 1 package (400 g; 14 oz) frozen cooked squash 1 mLsalt 1 mL curry powder dash of white pepper pepper 200 mLmilk paprika Saute onion in butter in medium saucepan until until softened. Add potato, chicken stock, squash, salt, curry powder and pepper. Heat, covered, over medium heat until squash is thawed. Use a fork to break squash apart and hasten thawing. thawing. United Way Agency Helps Durham Region Family YMCA Catherine, a young mother of a two-year-old, and whose husband is unemployed, was very unhappy within herself. She needed friends and to get out with other young mothers. Her son, Alex, would not leave her side, even to let her go into the kitchen. Most of her time was spent holding him and watching television during the day. Consequently, no housework housework was done, and meals were not prepared when her husband returned from job- hunting, ; Through her social worker and the program director at the YMCA, arrangements for sponsorship were made for Catherine and Alex to attend a local mother and tot program once a week. , This gave Catherine thç opportunity to meet other mothers her own age who had little children. She also bené- fitted from the well-organized programs which took place each week. They offered iri : teresting topics on both home and personal care, along with community-based programs. Also, Alex had the benefit of his own program with children his own age at the same timé. He had the opportunity to make new friends, and hie learned that although his mother had left him, she would return. ; By being given the opportunity opportunity of attending this weekly program, Catherine and Alex return home much happier, and Catherine is beginning tô take a greater interest in her. home and family.
