Bowmanville Around the House l elephone 623-5792 HONEYOATMEAL COOKIES 1 cup honey Ms cup shortening 1 egg, beaten 1M> cups sifted flour Vi tsp. baking soda Hi tsp. salt 1% cups rolled oats 4 tbsp. sour milk or buttermilk 1 cup raisins In a large bowl, cream together honey and shortening. Beat in egg until smooth. Sift together flour, baking soda and salt. Mix with rolled oats. Add dry ingredients alternately with sour milk to creamed mixture. Mix well and stir in raisins. Drop by spoonfuls onto an ungreased cookie sheet. Bake at 190°C(375°F) for 12 to 15 min. (Makes 2 dozen cookies)!^ BANANÀ MUFFINS '/■> c. shortening 1 c. white sugar 1 egg beaten 1 cup mashed banana 1 tsp. baking soda 2 tsp. hot water '/a tsp. salt B-iC. flour Cream shortening and sugar, blend in egg and banana. HONEY CHEESECAKE A prizewinner in a local honey bake-off, this cake is packed with flavour and wholesome ingredients. Crust: 2 cups graham cracker cracker crumbs 1/2 cup melted butter 1 tsp. cinnamon Mt cup honey Filling: 3 tbsp. butter 2 cups cottage cheese, passed through sieve 2 tbsp. sifted all-purpose all-purpose flour 1 tsp. salt 1/3 cup honey 3 tbsp. lemon juice 1 tsp. grated lemon peel 4 eggs,separated Mi cup honey 1/2 cup milk Topping: 1 cup fresh cherries or canned cherry pie filling 2 tbsp.honey 2 tbsp. cornstarch Crust: Combine ingredients. ingredients. Press firmly on bottom and sides of 3 L (12 x 8-inch) baking dish; set aside. Filling: Cream butter. Blend in cottage cheese, flour and salt. Beat in 75 mL (Mi cup) honey, lemon juice and peel. Add egg yolks, one at a time, beating well after each addition. In separate bowl, beat egg whites until stiff; slowly stir in 75 mL (Mi cup) honey. Fold egg white mixture into cheese mixture. Blend in milk. Spoon filling over crust. Bake in 180"C (350° F) oven 1 hour. Meanwhile, prepare topping: In saucepan, combine cherries and honey. Stir in cornstarch and cook until thickened. Remove from heat and let cool. Chill until serving. When cake is done, let cool to room temperature. Chill in refrigerator for 4 to 6 hours or overnight.
