Lynda Gibson gave a veiy interesting talk on her experiences as a volunteer volunteer worker with the Medical Medical Missions in Jamaica. It is a novel departure from the usual and is bound to be popular even for company dinners. In a 2L (8 cup) saucepan, combine oil, onion and garlic. Stir- cook over medium heat about 3 minutas or until onion is limp. Stir In mushrooms, celery and sweet pepper. Continue to cook over medium-heat, stirring, until liquid evaporates (this happens quickly). 2. Add tomatoes, thyme, oregano, basil and popper. Bring to boil; roduce hoot and simmer, stirring occasionally, for 15 to 20 minutes or until thickened and saucy. 3. In a large saucepan, cook lasagna noodles in 3L (12 cups) rapidly boiling, lightly sailed water, about 8 minutes or until a/ dente (lender but firm). 4. To assemble lasagna, spread 125 mL (1/2 cup) of the sauce on bottom of a 20 cm (8 in.) baking dish. Top with single layer of lasagna noodles cut to lit dish, using ends to fill spaces. Spread wilh half the collage cheese and half the mozzarella, 250 mL (1 cup) sauce and another layer of noodles. Spread wilh remaining collage cheese and sauce. Sprinkle with remaining mozzarella and Parmesan. 5. Bake In a 180 degree C (350 degree F) over for 30 minutes or until heated through.
