It is great as an accompaniment to pork and poultry or served from a vacuum vacuum bottle at lunchtime. Serves 6 (about 8 cups/2 L). Preparation Time: 20 minutes Cooking Time: 15 minutes j 2 tbsp (25 mL) butter I 8 cups (2 L) Ontario Cabbage, finely shredded 1 Ontario Onion, chopped 1 celery stalk, sliced 1 Ontario Apple, peeled; cored and sliced 1 cup (250 mL) apple cider 2 cans (each 10 oz/284 mL) consommé 4 cups (1 L) water 1 bay leaf 1 tsp (5 mL) dried leaf thyme Garnish: Sour cream Chopped fresh parsley In Dutch oven or large saucepan, melt butter over medium-high heat. Add cabbage, onion, celery and apple; cook for about 10 minutes, covered, or until vegetables are softened. Stir in apple cider, consommé, water, bay leaf and thyme. Cover and bring to boil; reduce heat and simmer for about 15 minutes. Discard bay leaf. Serve immediately with dollop of sour cream and sprinkle of parsley. (May be covered and refrigerated for up to 2 days.) Nutritional Information (1 Serving) Protein: 3 grams Fat: 4 grams Carbohydrates: 17 grams Calories: 106 Source of Fibre H* J' -V On Tuesday evening, November 30th, 2004, the Newcastle Horticultural Horticultural Society enjoyed the Christmas Show and Pot Luck Dinner at St. Francis of Assisi Church Hall. The tables were adorned befitting the festive season and food was sumptuous and delicious. delicious. To the juniors and leaders who served and cleaned up, a huge vote of thanks. President Narda Hoogkamp introduced the head table, Councillor Councillor Gordon Robinson and wife Sherry, Councillor Charlie Trim, Secretary Darlene Sullivan, Vice President Rose Pandy, District 17, Assistant Director Jim McWilliam and friend Janet, and Father Peter Seabrooke, who asked the Blessing. Secretary Darlene Sullivan gave an account of 2004 meetings meetings and functions, highlighted highlighted by the Society's 90th anniversary. Judge Margery Frec- thy congratulated exhibitors exhibitors on the fine show and announced Isabel Hart as winner of the show, earning the most points. Judge's choice was Rose Pandy's arrangement containing much natural material. Convenor of the show were Pam Daley and Bonnie McCracken. Entertainment for the evening was provided by comedian John Darcy and the singing of Christmas Carols. The laughter was great! Assistant District 17 Director Jim McWilliam installed the 2005 executive: executive: President Rose Pandy, Vice President Mary Thorley, Secretary Darlene Sullivan, Treasurer Treasurer Pam Daley, Directors Dorella Lan- caster-Forget, Josie Welter, Welter, Vicki Lesnick, Shelly Etmanskie, Isabel Hart, Ann Best, Margery Freethy, Susan Gilfoy, Jean Shaw, Hazel Crago, & Bonnie McCracken. Rose Pandy, President for 2005, gave a short speech, thanking all for coining and seeking support support as she takes on this new position, Director Vicki Lesnick invited 2004 President Narda Hoogkamp to the podium podium where she thanked Narda for her many years of dedication and work. In appreciation Narda was presented with a glass window beautifully done by Susan Gilfoy. By the way, this year the weather co-operated. Some years that has not been so. The first meeting of the New Year 2005 will be held Jan 18th at 7:30" pm in the Historical Room of the Newcastle Community Hall. An informal time will be enjoyed sharing garden stories and knowledge.
