Preparation Time: 15 minutes Cooking Time: 1 hour Serves: 4 to 6 4 Ontario Leeks 1-1/2 lb (750 g) skinless chicken thighs (about 6), trimmed 8 cups (2 L) chicken stock or water 1 Ontario Onion 1 bay leaf 2 sprigs fresh thyme 10 peppercorns 4 medium Ontario Carrots, peeled and sliced Salt and freshly ground pepper Slice white and light green parts of 1 of the leeks into 1-inch (2.5 cm) pieces; place in large saucepan. Add chicken, stock, onion, bay leaf, thyme and peppercorns; bring to boil. Reduce heat, cover and simmer for 30 to 40 minutes. Remove chicken pieces. Lorna Atkins Atkins introduced Dave Hinton, our guest speaker speaker for the evening, who presented a beautiful slide presentation on "The Evolution of a Garden." The audience was amazed at the transition transition in forty years, from an empty five acre field to the present day garden paradise. The years have given him many challenges--climate challenges--climate change, diminishing diminishing water flow from development, pests, weeds, and growth as trees crowd out precious precious rhododendrums and azaleas. Through all this, Mr. Hinton never failed to amaze visitors with his unique and unusual perennials including hardy cacti. He said his gardens are always "open" for visitors. visitors.
