For hundreds of thousands of Canadians, lack of literacy skills leave a huge void in their home cookin' lynda kendry Snacking Time It has been a common thought that ity day-to-day lives and often make it impossible to find even menial employment. February 27 to March 6 has been declared Regional Family Literacy Week, and the purpose is simple enough: to highlight the value of reading and writing for people of all ages. Cuddling up for a family story is a wonderful way to build warm memories and to promotes invention. My theory extends that thought. Laziness = invention too! This came to me the other day when I had the urge to bake cookies but didn't want to take the time to bake them - my oven is small so I can only bake one dozen at a time. The solution - use the cookie recipe and bake it in a "x18" pan and have squares! The recipe I used was one I copied from T.V. when Mrs. Fields' was promoting her new cookbook recently. I doubled the amount of baking soda and substituted coconut for Chocolate chips - the result was a moist bar that keeps well in an airtight container. It would probably be even better with the chocolate chipe too! Coconut Bars! Bake at 360° oven Mix in order given. Cream together: 1 c. margarine 1 c. brown sugar 1/2 c. white sugar 2 eggs Blend in: 2 tsp. vanilla Add: 21/2 e. flour, 1/2 c. (or more) shredded coconut 1 tsp. baking soda 1/4 tsp. salt Mix until just blended. Spread in buttered or sprayed 9" x 13" pan. Bake until golden brown and starting to pull away edges of pan.
