Unfortunately there is no time to relax. Camp Counsellors have had their hands full with the introduction of crazy Critters preschool camp. Numerous activities have been running. Rollerblading was run at the Scugog Arena where kids were offered a rollerblade demonstration by Bauer-Canstar. On July 22, Kawartha Region Conservation Authorjty presented an animal adaptation study to all campers which taught about animals in their natural habitat. Sports camp has been full of fast paced action, with many activities including gymnas- tics, floor hockey, basketball, soccer, lacrosse and baseball. The counsellors have assured that Scugog has many budding athletes. A recent trip to the Scugog Shores Museum introduced everyone to pioneer activities and walk through history. The preschoolers have also had their hands full with Mexican days, Air bands and Arts and Crafts. We're very proud of ourselves! Healthy eating is so much easier in the summer. Occasionally though the desire to dazzle with a decadent dessert causes me to ignore all the good habits and splurge. This week's recipe is a great finish to a planned dinner party or get-together where you're asked to bring dessert. The original recipe calls for a cake mix with extra eggs and vegetable oil added with water but we started to use a Chocolate Mayonnaise Cake a couple of years ago with excellent results. This cake should be made at least 1 day ahead (or up to 4 days ahead). Cake: Mix: 2 ¢. flour 6 Thsp. 1 1/2 tsp. baking powder 1 1/2 tsp. baking soda 1/2 tsp. salt Mix: 1 c. white sugar 1 c. mayonnaise Add: 1c, hot water and mayo mixture alternately to flour mixture. Add 1 tsp. vanilla. Beat until smooth and creamy. Bake at 350° in 2 round cake pans. Cool before splitting each cake into 2 layers using large knife or strong thread. For topping combine: 1 large container Cool Whip 2 cups sour cream (light variety works well) 1 c. white sugar 2 c. shredded" (angel flake) coconut Mix until blended, and place on top of each layer of cake to make 4 layer torte. Cover outside of cake then cover in airtight container or with plastic wrap before storing in refrigerator. Decorate with fresh fruit of cherries before serving. Leftovers store well. Don't tell them about the sour cream until after they eat it. This Week's Specials!
