Add 1 egg and mix until creamy and smooth. Blend in 1 1/2 cup flour, 1 tsp. baking powder, 1/2 tsp. salt and 1 tsp. vanilla. Stir in date mixture. Mix until just blended together. Add 1/4 - 1/2 cup chopped nuts if you like (or arent allergic!) Pour into greased or sprayed loaf pan and bake approximately 40 minutes or so. Cool before removing from pan.
