culinary creations judy bonnell I have been working a lot this week with fresh garlic and will give you two exceptional ideas to compliment any dinner. Garlic, I believe has a savory flavour if eaten raw and takes on almost a sweet taste once roasted or cooked. A wonderful appetizer idea for true lovers of garlic is roasted garlic bulb. Use one bulb per person. Bulb being the entire garlic, many cloves comprise the bulb. Take your bulb of garlic and cut the first 1/8 to 1/4 inch off the tip of the bulb of garlic. To distinguish the top from the bottom; hold the bulb in your hand and look for the rooted end. This is the bottom of your garlic. The top being the pointy paper like tip. Grease a 9° tube pan; line bottom with waxpaper. Cream margarine with molasses or honey until fluffy. Beat in juice concentrate, applesauce, orange rind & juice & eggs. Measure dry ingredients and reserve 1/2 cup flour for the fruit. Toss dry ingredients to mix well. Add to the liquid mixture and blend well. Combine the fruits and nuts and toss with reserved flour. Fold them into batter. Pour batter into the prepared pan and garnish with walnut halves (if desired). Bake for about 1 hour & 15 minutes or until tester inserted into the middle of cake comes out clean. Let stand for 20 minutes. Remove from pan. Makes 10-12 servings: Approx. 150 cal. each; 4 g. fat.
