Unfortunately the focus on nutritious foods often leads to the impression of what you will have to cut out or limit. For many of us the idea of giving up or refraining from our favourite foods might be the main obstacle in changing our eating plans for the better. The recipe 'makeovers' provided in this food column try to promote the fact that great taste can come from low in fat and high in fibre alternatives. Let's get rid of food deprivation and guilt to replace them with a healthier relationship with food. This does not mean to become overly obsessive about restricting fat grams. Don't run the risk of becoming food and fat phobic. It is not just one meal that determines your nutritional status but your overall long-term relationship with food. There seems to be a prevailing attitude that if food tastes good, it's probably not nutritionally good for you and conversely, that healthful foods lack in taste and are less satisfying. The reinforcement of this belief is apparent through the years of product inferiority in the low- calorie line provided in the marketplace. Taste in the past was sacrificed in the creation of lower caloric, inferior product assimilations. We chewed on [Clark Cute | Supply Co. At this point husbands can be handy to have around also. Stoke that fire, get that blanket, pour that drink, if you know what I'm saying! Specialty coffees are always enjoyable. I'd like to share a few ideas and suggestions to warm the body and soul. Coffee is a great start. Let's not forget hot chocolate, tea, or good old boiling water. The combinations are what make the beverage. Hot Buttered Rum is one that most ingredients are readily available in your home. Boil about 4 ounces of water and add some brown sugar to taste. Stir and dissolve the sugar. Add one clove and dark rum. I'll leave the amount up to you. Float about 1 teaspoon of unsalted butter on top and dust with nutmeg. If you have a sweet tooth, stick to the drinks made with hot chocolate. Use this as your base and add your favourite liquors. For more chocolate flavour use (peach), Triple Sec or Grand Marnier (orange) Amaretto (almond) or Frangelico (hazelnut) add a variety of unusual tastes. For the coffee lovers the combinations are endless. Sugar your rim if you choose. Rub the rim with a wedge of lemon or lime and dip the rim into a bowl of fruit sugar, raw sugar or regular granulated. The famous Spanish coffee is simply brandy and Kalhua. Irish coffee is Irish whiskey and Irish mist. B52 coffee is a combination of Kahlua, Grand Marnier, Baileys, and coffee. Fresh whipped cream on top is wonderful, snd my favourite part of the drink. Remember to whip your cream with a little sugar, and vanilla and never in a plastic bowl. Always use metal or glass. Metal is preferable and make sure your bowl is squeaky clean. We have a coffee that has been named for two customers who + introduced us to the S & S Coffee. Frangelico and Baileys with a sugared rim and whipped cream. Another favourite of mine is a Blueberry Tea. The ingredients in this drink are no resemblance to the name. Make a pot of hot tea and set aside to steep. Get out your biggest brandy snifter and pour Amaretto and Grand Marnier into the glass. Slice a piece of fresh orange and drop it into the glass. Pour your tea (as much as you choose) on top and enjoy. For a gathering after skiing or toboganning; a mulled red wine is different and tasty. This can be done in your microwave if you like. Heat up all ingredients in one container. Start with a bottle of red wine, add one cinnamon stick, 1/4 cup of granulated sugar, 1/2 teaspoon of grated nutmeg, allspice and/or ground mace, slices from one orange and about 10 cloves. Remember that nothing is written in stone. Use your taste as your guide. (Judy Bonnell is chef and proprietor at Stable Restaurant on Shirley Road, Port Perry).
