They can never be over or under done. Prepare your favourite oil and vinegar dressing and leave out the vinegar. If it is a simple dressing, you will require more flavours, add some fresh herbs. The combinations are up to you. Take about 5 or 6 of your favorite vegetables and cut into a variety of shapes. They should be large enough to be distinguished. Items like snow peas or green beans should be left uncut. Blanch your vegetables until desired tenderness, drain and toss in your dressing. Serve immediately. Nice additives for any salad dressing in the summer jis lemon peel finely chopped, or perhaps a little fresh squeezed orange juice. Prepare a caesar salad dressing and set aside. BBQ a boneless chicken breast. Remember to season just prior to cooking. While the chicken is oh the grill, gently tear apart enough romaine lettuce for two. Try to never cut your greens, as lettuce will rust from the knife, and presentation is much nicer if you tear it. Thinly slice or cube your chicken and toss with the romaine, (this will slightly wilt the romaine), add your dressing and you have a warm chicken caesar salad. In the cold department, fresh cooked seafood is yummy on caesar salad. Use shrimp, crab leg meat, or scallops. Superb use for leftovers. Square shaped sandwich bread : is best for this idea. Toast your bread and cut into triangles. Prepare some herbed cream cheese by softening the cheese and set aside. Put about two or three tablespoons of eream in the cream cheese. Add a combination of your favourite herbs or spices. About 4-5 tablespoons. Mix all together until well blended. Spread each triangle of toast with the mixture. Finely chop about three sundried tomatoes. Place atop the mixture. Plate under the broiler for a few minutes, enough to warm the slices. . Also when alcohol is metabolized by the liver, it uses up niacin & thiamin, which means that these 'B' vitamins are not available for other essential purposes. Alcohol also interferes with the absorption & storage of gther vitamins, especially folacin & B12. And because alcohol is a diuretic that increases output of urine, it can cause loss of such water soluble minerals as maghesitim, potassium & zinc. SASSY SALSA This is a quick & economical version. Use as a dip with nachos or as a sauce for burritos. 1 can (19 oz) tomatoes 3 tsp. cider vinegar 1-1/2 tsp. each cumin & chili powder 3 green onions, chopped 1 clove garlic, minced , 1/2 medium, green pepper, chopped In a food processor or by hand, chop tomatoes. Transfer to bowl & stir in vinegar, spices, onions & green pepper. Cover & refrigerate for up to 4- 5 days. ' Makes about 3 cups; 2 tbsp. about 7 cals; trace of fat!
