Too many women have become accustomed to denying themselves of essential nutrients in an attempt to lose inches and pounds because they have learned from friends, family or the, media to restrict caloric intake in order to lose fat. However, calorie restriction in itself provides only very short term benefits in energy balance for women desiring a loss of adipose (fat) tissue. A sufficient reduction in caloric intake may lead to weight loss when activity levels remain constant, but it will also retard metabolism mostly through changes in thyroid hormone concentrations. As a result many women are trapped in a vicious cycle of starvation and fat accumulation due to dieting habits. It is a common finding among women who are restricting their food intake seyerely for fat to remain stubborn due to significantly reduced metabolism. The result is that many of these women eat'very little, ih faét too little to provide the nutrients they require and still gain weight and fat Many middle-aged and older women become frustrated with their body image because they have set unrealistic goals. Some fat accumulation, especially around the waist, is an inevitable part of the aging process. Striving for a 'twenty-year old' body is not healthy or realistic. Even those who are fortunate enough to have dietary and exercise habits that preclude major fat accumulation will find the aging process a more comfortable experience if they accept this and learn to place less emphasis on looking young. Skinny Scalloped | Potatoes 1/4 cup all purpose flour 1/2 tsp. salt 1/2 tsp. pepper 2'cups skim or 1% milk 6 medium, potatoes, thinly sliced 1 large onion, , thinly sliced Sprinkle top lightly with Parmesan cheese (you may use "light") Stir flour, salt and pepper together in saucepan. Mix in milk gradually until no lumps remain. Heat and stir until it boils and thickens. Remove from heat. Place 1/2 of potatoes and 1/2 of onion in 2 quart casserole. Pour 1/2 sauce over top. Repeat. Sprinkle with Parmesan cheese. Cover. Bake in 350F oven for about 1-1/2 hours or until potatoes are tender Remove cover for a few minutes to brown if desired Makes 6 servings. Diners were greeted at the door by Grace Bassant and Jean Carnochan while Dorothy Butson supervised the attendance register. Some of Robert Burns' songs were included in a sing-song led by Geoffrey Gilham with Edna Beckett at the piano. 4 The Ivan Rodgers instrumental group provided some music of various origins and some Seniors "tripped the light fantastic". Members were brought up to date on the February programs which included: Tours and Travels by Jacklyn Kerr, Line Dancing and Exercises by Myrtle Bentley, Shuffle Board by Otto Bujtas, "55 Alive Driver Program" by Stan Rickard. The Choir with Edna Beckett and the Euchre Club with Grant Bright are also very active. The recent installation of stage drapes has greatly enhanced the setting for programs performed on the stage. The installation of these drapes, by Seagrave Interiors, was successfully completed by means of a co-operative arrangement between the Seniors and the Municipality of Scugog.
