All are easy and offer three delicious ways for you to show off your culinary talents. FLAMING BANANAS 4 tablespoons butter 2 cup brown sugar 4 medium size firm, ripe bananas 1 tablespoon lemon juice 4 teaspoon cinnamon Y cup banana liqueur % cup light ram 4 scoops vanilla ice cream Melt butter in electric fry pan or chafing dish, add brown sugar and stir "til smooth. Add halved bananas and, tilting pan, baste with syrup for about three min- utes. Sprinkle with lemon juice and dust lightly with cinnamon. Add liqueur and rum. Ignite carefully and slide pan back and forth over heat 'til flames die. Place two banana halves on serving dish, spooning some syrup over them and top with scoop of ice cream. Spoon sauce over all and serve immediately. You can impress your guests by preparing this on a server near your dining table. SENSATIONAL PEARS 4 pears Lemon juice 6 tablespoons black cherry jam Chocolate cherry liqueur Peel pears and slice bottoms off, reserving bottoms to be used la- ter. Brush pear with lemon juice and remove core. Spoon jam into cored pear and set on re- served bottom slice, in a sherbet glass. Spoon liqueur over pears, and serve. A light, impressive finish to your meal! SPARKLING BERRY TRIFLE This special dessert looks best in a crystal bowl . . . read on. 3 eggs % cup sugar 1% tablespoons cornstarch 2 cups milk 2 teas vanilla extract 12 double lady fingers Y cup orange liqueur 3 cups blueberries, fresh or dry-pack frozen, rinsed and dried 1 cup heavy cream 2 tablespoons confectioners sugar . 4% teaspoon almond extract Ya cup thinly sliced toasted alrhonds 3 tablespoons sugar Beat eggs-and sugar until frothy and lemon colored. Stir in cornstarch, then gradually stir in milk. Cook over low heat until custard thickens, stirring con- stantly. Be careful not to boil mixture. Cool, stir in vanilla. Split lady fingers and arrange on bottom of bowl. Sprinkle with liqueur and cover with 2 cups of berries. Spoon custard over berries. Whip cream with almond extract and confection- ers sugar and spoon around edge of bow! in a ring: Stand almond slivers upright in cream and fill center with remaining berries.
