She remembers her mother mak- ing this bread for their family of nine near Winnipeg, Manitoba. It was baked outside the farmhouse in a brick oven her father built. In the early morning the girls would start a log fire inside the oven and let it burn for about two hours. This heated the bricks to the right temperature. Then the ashes were cleaned out to bake the pans of bread dough in the homemade oven. This is a basic recipe you can use to make various kinds of bread, such as cinnamon, poppyseed and coconut, or it is just as good plain. Also, this dough can be fried for a short length of time in about an inch of oil to make donuts. To do this, the dough has to be rolled thin, cut out with a glass and a hole made in the centre before frying. Donuts are delicious plain or turned in con- fectioner's sugar. -- Bring one litre of milk almost to boiling and set aside to cook to lukewarm. -- Set aside one cup lukewarm wafer to which is added three packages of active dry yeast (7.5 g size each). Leave the yeast to dissolve in the lukewarm water and sprinkle one tsp. of sugar over the yeast to make it work. -- Use a large bowl that can be covered or preserving kettle with lid to prevent drafts. (In the summer you don't need a heating pad -- just use blankets to cover the bowl/kettle). $ -- Grease your pans with margarine. -- Old, round aluminum saucepans give a cottage shaped loaf and an Angel cake pan can be used to make a circular bread, such as a cin- namon or poppyseed roll. -- Check the dough to see when it doubles in size. It will look like a big Cornish pastie. -- Turn or twist the rolled up dough to give it a marble effect in the finished loaf. -- Put the twisted roll in the Angel cake pan and join the ends together will do, and add the following ingredients: 1% cups white sugar 1 c. of oil poured over the sugar (Mazola was used). 1 tbsp. salt -- Separate six eggs and put the a yolks in with the ingredients in the large bowl or kettle. -- Mix egg whites for a couple of minutes until foamy and add to the "rest of the ingredients in the bowl/kettle. Still using a mixer, .combine all the ingredients again. -- Add the milk you set aside that is lukewarm now, to the rest of the in- gredients in the bowl/kettle. -- Add the dissolved yeast to all the ingredients. -- Add a few cups at a time of all- purpose flour to the ingredients. (Robin Hood Flour was used 3.5 Kg.) -- Mix the flour into the ingredients with your hands until the dough peels off your hands fairly easily. (This is how you judge what amount of the 3.5 Kg. of flour to use.) We us- ed nearly all the bag of flour e5cept for about two cups. -- Add raisins now is you want them in the bread. -- Put a cover on the bowl or kettle. -- Set a heating pad to medium. -- Put the covered pot on top of the heating pad and cover with a quilt to keep the heat in. -- In about half-an-hour reduce the heat to low on the heating pad and keep the pot covered with the quilt TAS Dixie Lee Econo Box: 9 pieces of delicious golden can't afford to miss.
