Top each with a slice of cheese and mato, Beat egg white until stiff, add dash of salt; fold in mayonnaise and chives or parsley. Heap meringue on top of sandwiches and arrange on baking sheet. Bake im a moderate ovem (350 deg. F.) about 15 minutes, or until cheese is golden. Serve im- mediately. - SPICED GRAPE JELLY 4 cups juice ; 7 .oups sugar 14 bottle liquid faut pectim To Prepare Juice: Stem about 3 pounds fully ripe grapes; erush thoroughly. Add % cup eider : vinegar, 1 teaspoom cloves, and 2 teaspoons cinnamon. Bring to a boil and simmer, 'covered, 10 minutes. Place im jelly cloth or bag and squeeze out juice. Then bring to a full rolling beil and boil hard 1 minute, stirring constantly. Remove from heat, skim, powr quickly into glasses. Paraffin at once. Makes about 10 six-ounce glasses. STRAWBERRY BAVARIAN (Makes 8 te 10 Servings) 1 large can evaporated milk, chilled icy cold 1 package strawberry jelly powder 1-3 cup sugar 1 cup hot water tsp. grated lemon rind V4 cup lemon juice la cup water Yo cup quartered strawberries. frozen Mix jelly powder and sugar in large bowl. Add hot water and stir untll dissolved, Add lemon rind, lemon. juice and % cup water, Chill until slightly thick- ened, then beat untd fluffy. Add quartered strawberries. Whip evaporated milk until very stiff, fold lightly into gelatin mixture. Pile into shevbets. Chill 2 hows. HALLOWE'EN SHERBET (Makes 6 to 8 Servings) 1 tbsp. unflavored gelatin 1-3 cup cold water 1 6-02, can frozen lemonade concentrate 2 cups milk 4 cup sugar le pint whipping cream, whipped 3 drops yellow food coloring Soften gelatin in cold water. Stir over hot water until gelatin dissolves. Combine lemonade concentrate, milk, sugar and gel- atin and beat well. Pour into re- frigerator trays; freeze until par- tially firm. Turn into chilled bowl and beat again. Add whipped cream and food coloring; blend thoroughly. Return fo refriger- ator trays and freeze until firin, stirring occasionally during freer- ing process.
