The problem is, there are so many different definitions, which dessert is which? Betty a baked pudding made of layers of spiced and sugared fruit and but- tered bread crumbs. Clafoutis a French cobbler, with fruit (usually cherries) on the bottom, cus- tard, and a rough batter crust baked on top Cobbler a spoon pie (more like a fruit stew with dumplings), in which bis- cuit dough is dropped onto the fruit before baking. The consensus is that the dish got its name because the lumps of cooked dough resembled cobblestones. Crisp a deep-dish fruit dessert made with a crumb or streusel topping and baked. Crumble a British dessert in which raw fruit is topped with a crumbly pastry mixture and baked. One reference says a crumble is like a crisp, but not as rich. Grunt a spoon pie, with biscuit dough on top of stewed fruit, which is steamed, not baked Pandowdy a spoon pie, with fruit on the bottom and a rolled crust on top, which is broken up to allow the juices to come through Slump a spoon pie, including cooked or uncooked fruit topped with biscuit dough or pie crust, which can be baked or steamed, and can be made upside down And by the way, what is a deconstruct- ed dessert? I was having a lovely dinner at one of the restaurants in the King Edward Hotel and there was a decon- structed black forest cake on the menu. Well, at the time, Id never heard that ter- minology before, so I thought Id better check it out. When dessert time came, I received a delicious mini chocolate cake, with a mound of homemade sour cherry filling off to the side and in the other cor- ner of the plate was a pile of fresh whipped cream. The idea being that you get all the flavours of the original dessert its just not assembled. Some months later, we were out at a restaurant in Orangeville where my son spotted a deconstructed lemon meringue pie I explained the theory and he ordered the dessert. The presentation was similar, but the quality was poor too bad, since they saved some time on the preparation, they couldve put a little more effort into the taste! Cest la vie. (Lori and Gerry can be reached at whatscookin@independentfreepress.com) Bread and Butter Pickles Ingredients 18-24 3-4 cucumbers 6 cooking onions 1 cup pickling salt 2 1/2 cups pickling vinegar /cider vinegar 1 1/2 tsp celery seed 1 tbsp mustard seed 1/2 tsp ground cloves 1/2 tsp tumeric 3 cups sugar Method Scrub cucumbers and slice crosswise in thin slices. Slice onions. Alternate cucumbers and onions and salt in a bowl. Cover and rest for one hour. Put vinegar, celery seed, mustard seed, cloves, tumeric and sugar in a pot and bring to a boil. Reduce heat to a simmer and continue to simmer for five minutes. Stir occasionally to ensure sugar is com- pletely dissolved. Turn off heat. When cucumbers are ready, rinse salt off thoroughly. Add cucumbers and onions to the pot of brine and bring up to a boil. Simmer five minutes until cucum- bers change colour and are slightly cooked. Sterilize jars. Spoon pickles into jars and cover with brine. Put lids on immedi- ately and tighten until finger-tip tight. Place jars of pickles in a large pot of boiling water (so that the water covers the tops of the jars) and boil for 10 minutes. Then remove from the water (very care- fully so as not to bump them) and allow them to cool over night on the counter. Let pickles rest for six weeks before eating.
