8 Independent & Free Press,Friday, January 8, 2010 Tomato Bean Soup (Fassolada) Ingredients · 1 1/2 cups navy beans, dried · 1 tbsp baking soda · 6 cups water · 1 cup crushed tomato sauce · 1/4 cup olive oil · 1 carrot, chopped · 1 celery, chopped · 1 yellow onion, minced · 1 small potato, peeled · 1 tsp fresh ginger, minced · 1 tsp red pepper flakes · 1 bay leaf · 1 1/2 tsp salt, plus to taste · juice of 1/2 lemon · 1/2 cup fresh parsley, chopped · 1/2 cup feta cheese, crumbled · 2 preserved anchovy fillets, minced (optional) · lemon wedges (optional) What's Cookin': Method Place the beans in a large bowl, cover with water and let the beans soak overnight. Drain the beans and transfer to a large stockpot. Cover with water and the baking soda. Bring the beans to a boil over high heat for 5 minutes. Drain again and replace with six cups fresh water. Add the crushed tomato sauce, olive oil, carrot, celery, onion, potato, ginger, red pepper flakes, bay leaf and salt to the stockpot. Bring to a boil over high heat. Reduce heat and simmer for at least one hour or until the beans are fork tender. Remove from the heat. Discard the bay leaf and remove the potato. Place the potato in a food processor along with one cup of soup. Puree until smooth. Re- Three Greek sisters had special summer project Today we are pleased to introduce some new friends of ours! Every once in awhile we encourage a guest chef to produce a recipe for our column. The recipe and photo today are courtesy of Betty, Eleni and Samantha Bakopoulos. These sisters-- and remarkable cooks-- have just self-published their first cookbook: 3 Sisters Around the Greek Table. This book has just won the Gourmand World Cookbook Award for Best Foreign Cuisine in Canada. All three women have appeared on CBC Radio as well as Omni TV and more importantly-- in my cooking school! This is one of my favourite new cookbooks. I don't very often give a "plug" for a cookbook, but I was really taken by this book. I can vouch for the food, as I've had the pleasure of eating some of it. But the sisters also did all the cooking, food styling and photography themselves for their book. They devoted the summer to cooking together, then sitting down with their families together to eat-- what a wonderful way to put a cookbook together-- and that family feeling sure pays off turn the puree to the pot and stir. Taste and adjust the seasonings if necessary. Add the lemon juice, parsley and crumbled feta to the soup and stir. Serve warm. Top each bowl with some chopped anchovies if desired and a lemon wedge. I'm sure you'll see some of the recipes in upcoming columns. I got a new crockpot for Christmas-- it's huge! It was a gift from Dave, my dad. I have a feeling that he opted for the extra large one, hoping there might be an invite for him to share in the goodies once they are cooked! I also got a couple of new cookbooks and a new cooking mag, so there's lots of inspiration! Gerry got the most enormous cookbook I've ever seen, called Butter. She also got a few others as well, so we've both been reading away and thinking up new recipes as we go. Have fun and keep cooking!
