Dark Chocolate Chunk Cookies Makes 24 cookies Ingredients · 1 cup brown sugar · 1/2 cup butter · 1 egg · 1 tsp vanilla · 1 1/2 cups flour · 1 tsp baking powder · 1/2 tsp salt · 1 cup dark chocolate, cut into chunks Method 1. Cream butter and sugar together. 2. Add egg and vanilla. Mix well. 3. In a separate bowl, mix flour, baking powder and salt together well. Add dry ingredients to the wet and mix. 4. Add chocolate and mix until combined, do not overmix. 5. Drop by tablespoon onto parchment-lined baking sheet. 6. Bake in a preheated 375 F degree oven for approximately 12 minutes. high heat. Also, the cookies should be on a light-coloured baking sheets-- save the old black baking sheets for roasting vegetables and use the new light ones for cookies. This will help prevent your cookies from becoming too dark. Cookies should bake on the centre rack and if you have multiple pans of them, then bake them in batches, rather than cramming all the pans into the oven at the same time. If you like a really soft cookie, then take them out of the oven before they start to firm up-- they should still feel almost doughy. They will continue to cook on the counter until their temperature cools down. Also for a soft cookie, replace some of the sugar with corn syrup. Why not try making a double batch of cookie dough and then freezing some for easy cookie making later? You can form the dough into cookies, then freeze on baking sheets until completely frozen, then transfer to a Ziploc bag-- then all you have to do is grab a few cookies out of the bag and place on a baking sheet to bake. Do not thaw the dough-- bake the cookies from frozen, the baking time will only change by a minute or so and the temperature remains the same.
