He is in an outdoor education program and does lots of camping, hiking, biking, canoeing, etc. He showed me how to dehydrate food without having to buy a dehydrator! I've never dehydrated any food be- fore, so this was very cool. We made quinoa with vege- table stock instead of water and I sautéed a whole bunch of veg- gies and mixed it into the cooked quinoa. Then Alex spread the whole mixture out into a very thin layer on a couple of baking sheets. Pop them in the oven at 150 degrees F. for several hours. Make sure to keep the oven door open just a crack, as this is how the moisture escapes. When done, the quinoa and veggies are dry and can be taken winter camping with no fear of freez- ing. He also dehydrated some homemade chili. Then, he invited us to go hik- ing with them on family day, yesterday. At lunchtime, he boiled up some water on his little camp stove and added the quinoa. All it needed to do was sit in the water for a few min- utes to rehydrate and it was de- licious! I didn't get a chance to try the chili, as they were having it for supper later that night, but the same technique applies-- just add some hot water to the plastic baggie of dehydrated chili and you're set to go! If using frozen spinach, thaw and drain well. For fresh spinach, place in a pot of boiling water for 30 seconds, then drain, rinse until cool, drain well and chop. 2. To assemble quiche, put 1 cup of shredded cheddar or swiss cheese in bottom of pie shell. Top with spinach and onion. Put remaining cheeses over the spinach. 3. Beat eggs, then add milk, cream, nutmeg, salt and pepper. Pour over quiche ingredients. 4. Bake in a preheated 375 degree F oven 45-60 minutes, uncovered. 5. Let rest 10 minutes, cov- ered with foil, for egg mixture to set.
