Beat egg whites until stiff, but not dry. Gradually beat in sugar. Fold in chocolate chips. 2. Put in preheated 350F degree oven, then turn the oven off. Leave it overnight. 3. Be sure to put a sign on the oven door so nobody turns the oven back on by ac- cident! This week's recipe is Grandma Calder's meringues. That is my (Lo- ri's) grandma, Gerry's mom. Appar- ently she was a very good cook in her day- unfortunately, most of the time that I knew her, the arthritis in her hands made doing much cooking very uncomfortable. However, this was one of her reci- pes. I imagine Grandma making these to take to one of the dances that her and Grandpa went to. Some of you will remember the days when all the church and service club halls were filled with dances on Saturday nights. I'm not sure if they always served dinner first, but they would have a band and they danced and danced. And there most certainly would be a table full of goodies to enjoy. Funny how we don't really do that anymore. What a shame. Back to the recipe. If you want to jazz these meringues up for Easter - you can add a drop of food colouring to the mix to give you a pale green or pink colour. The recipe also calls for one-half to one cup of chocolate chips. That is for personal preference. I prefer them a little less endowed with choc- olate, but mom likes more, so this is how we've sent the recipe to you -- so that you can make your own deci- sion. Have fun and keep cooking!
