As a self-taught brewer who crafted beer at home for over a decade before opening up Orange Snail in Milton three and a half years ago, Orsi says he was nev- er interested in brewing to certain cate- gories - he just wanted to make the beers that his family and friends loved to drink. Today, Orsi maintains a similar men- tality when it comes to his loyal custom- ers. "It's the great thing about owning a small brewery," Orsi said. "The custom- ers will tell you when they don't like something." Orsi's brewing process begins with his favourite step: building recipes and dis- covering flavours that work well togeth- er.
