I am totally uninspired by this weather! I have been thinking spring, and I am ready for it. I brought some lily of the valley and tulips upstairs from their winter stor- age, just to put a breath of colour in my house. I have purchased my first piece of summer clothing in readiness for the season. Usually Dave and I are on the road to Florida this week. This year we are foregoing our March trip so we can take a long talked about driving holiday through western Canada to Vancouver during July. Therefore there will be no articles about our southern vacation food experiences this spring. But, you can rest assured you will hear all about our western travels and food experiences this fall. If any of you readers have any sug- gestions of sights to see, places to eat or things to do we are just in the planning stages and would welcome your input. On another note, last weeks recipe was for crock pot roast beef. A day after it came out a friend e-mailed me a recipe for roast beef. Here it is for you: Gracie Allens Recipe for Roast Beef Take one large roast and one small roast and put them in the oven. When the small roast is burnt, the large one is done. I love that!! For those of you who dont know who Gracie Allen was, here goes. Gracie was the real life and TV wife of the famous comedian George Burns. Gracie and George had a TV show during the 1950s and 1960s. At the end of each program George would ask Gracie how she was. Well Gracie displayed a homespun sense of humour that stole the laughter and spotlight from George. It is a marvelous place in time to remember. Gracie wove her tales of her friends and their everyday lives, not the humour we experience today. By the way, we would like to clear up a point of some confu- sion about our involvement with the Kentners Social Catering Ltd. Dave and I sold our business in 2005 and this January the new owner (Horst Summer) changed the name to Silver Thyme Events and Catering. So, we are retired from our 31 years as caterers. (Lori and Gerry can be reached at whatscookin@independentfreepress.com) Searching for inspiration Lori Gysel & Gerry Kentner Just Chicken Ingredients 12 chicken drumsticks (bone in, skin or or off whichever you prefer) 2 tbsp Dijon mustard 3 tbsp vinegar 1/2 tsp dried rosemary 2 cloves garlic, minced 2 tbsp brown sugar 2 tsp dried oregano 1 tsp pepper 1/4 cup olive oil Method Mix all dressing ingredients, whisking in olive oil last. Place chicken in a Ziploc bag and pour dressing ingredients in with it. Seal well. Refrigerate chicken at least one hour or overnight. To bake, place chicken in a baking dish and pour marinade overtop. Sprinkle with a pinch or two of salt. Bake at 350 degrees for 45-60 minutes, uncovered, or until chicken is tender and cooked through. Serves six.
