We are dining with the one side of the family on Saturday in order to celebrate a 60th birthday at the same time. Then the other side of the family on Monday. Thank goodness, I only have to make one of the meals! Assuming that many of you are cooking up a feast of some kind this weekend, I thought you might enjoy this recipe. It is a delicious and very impressive dessert totally suited to fall meals but simple, simple, simple to make and really rea- sonably-priced ingredients! Dont skip on making the sauce, as it really tops off the cake nicely and it is so easy to make too. Very delicious served with a scoop of ice cream there is a wonderful vanilla bean flavoured one that I love. If you want to change up the cake a little, you can add some chopped pears to it or almost any kind of nuts would be good. For the chopped pears, add about 1 cup at the same time the date mix- ture is stirred into the batter. Nuts would get added at the same time pecans or walnuts would be my top choices. About one cup of the nuts would be enough. Make sure that you allow your dates to sit with the baking soda and boiling water long enough so that they are mushy looking before you add them in to the batter and dont cheat by only using hot water from the tap. It has to be boiling water or the dates wont break down properly. The cake can be made a day in advance, as it keeps nicely for several days. Just make sure it is completely cool, then wrap the pan well with plas- tic wrap so that it is air tight. If it was baked in a metal pan, remove it from the pan before storing. If its a glass or ceramic pan, then you can just leave it in the pan. The sauce can also be made a day or two in advance if you like, then just warmed up to serve. The whole thing is much better warm. Have a wonderful Thanksgiving; have fun and keep cooking! (Lori and Gerry can be reached at whatscookin@independentfreepress.com) Impressive dessert suits all fall meals Ingredients 1 cup + 1 tbsp all-purpose flour 2 tsp baking soda (divided) 1 cup pitted, chopped dates 1 1/4 cup boiling water 1/4 cup softened butter, unsalted 3/4 cup granulated sugar 1 egg 1 tsp vanilla Caramel Sauce 1/2 cup butter, unsalted 1/2 cup 35% cream 1 cup dark brown sugar lightly packed Method Pre-heat oven to 350 F. 1. Mix together in a bowl: 1 cup +1tbsp flour and 1 tsp baking powder and set aside. 2. Place chopped dates in a bowl. Sprinkle with 1 tsp baking soda and the boiling water. Stir a little to cover dates and set aside. Allow dates to sit until quite mushy (approximately 15 minutes). 3. Using an electric beater, cream together one quarter cup softened unsalted butter and three quarters cup sugar. Add egg and vanilla and combine. Slowly begin to add flour. When all flour is incorporated, fold into bowl with dates. 4. Mix all ingredients well and pour into greased 8x8 pan. You can double the recipe and pour into 9x13 pan. Bake for 35-40 minutes. Remove from oven and cool. 5. Prepare caramel sauce by combining ingredients in a sauce pan and bring to boil over medium heat. Let boil for 7 minutes. Pour over individual servings of cake before serving. Cooks Note: This is best served as a small slice of cake with caramel sauce poured over top, then a scoop of ice cream on the side. If you pour the caramel sauce over the ice cream, it will solidify probably best to pour it over the cake.
