training for a marathon The 26 mile race requires maximum en durance and complex car nee pasta potatoes bread grains and legumes pro vide the most efficient for the athlete body It is a tradition that on the eve of a race marathoners around the world feast on carbohydrateladen dishes The Saturday night before the Shoppers Drug Mart Toron to Marathon more than 500 run and their families are ex to attend the Uncle Ben Rice Bash at the Hotel The delicious rice dishes which will be served to the marathon en have been created by three of Toronto s finest chefs Jamie Kennedy of Christopher McDonald can create a condition called glycogen tion where resulting muscle glycogen levels actually exceed normal preexercise levels During aerobic exercise glycogen and fat are broken down completely to obtain the most energy for exercise The level or intensity of exer determines what proportion of fat vs carbohydrates is used for fuel high intensity exercise the body uses glycogen as the fuel source This results in the rapid depletion of glycogen The overenthusiastic person going out for the first day of training will use mostly glycogen instead of fat for energy Using a variety of car bohydrate sources such as rice wheat and potatoes as opposed to a single source such as pasta can maintain interest in meals while providing maximum nutritional benefits A ZESTY DISH FOR RUNNERS Here s a classic high carbohydrate dish that combines nee and beans for a low fat com plete protein meal Mexican Rice and Bean Skillet With Cheese tsp oil 10 ml cup chopped ml cup onion chopped ml 12 cup pepper chopped ml cup cup tsp tsp I tsp cup Uncle Ben Rice water canned tomatoes drained and chopped red kidney beans chili powder cumin oregano mozzarclla cheese shredded 10 ml 5 ml 5 In a large skillet heat oil and saute vegetables and nee for 3 minutes Stir in water tomatoes beans and seasonings bring to boil reduce heat cover and mer for 20 to 25 minutes or until li quid is absorbed
