What's Cookin': Lori enjoys a friend's spectacular dinner Here's a recipe to make for Lori Gysel company! We & Gerry were invited Kentner to our good friends'­ Jill and Drew Farrington-- house for dinner a few weeks ago and had a spectacular dinner (as usual­ Jill's a great cook). But by far the coolest course was this one­ she served the Asian Noodle Salad recipe that you see in the column today with seared salmon as an appetizer. It was so interesting when it came to the table, you really couldn't tell at first glance whether it was a green spaghetti noodle or something else­ and it turned out to be cucumber! The flavor was great and how healthy! Jill says the secret is that she uses her gadget which is a cross between a vegetable peeler and a zester to make the "noodles" out of the cucumber. If you've never seen or heard of a gadget like this before, I'm told that they are available at Golda's Kitchen shop. Just so you can be totally jealous, I'll tell you the whole menu. We started out with an amuse bouche of seared sea scallops on a bed of mache, followed by the Asian noodle salad with seared salmon as the appetizer. For the main course there was beef tenderloin, wrapped in spinach and prosciutto and then the whole thing was topped off by this awesome lemon meringue roulade. We'll have to con the recipe for the roulade out of her soon and get it in the paper as well! We are very lucky to have so many good friends­ we're even luckier that all of our friends are good cooks! Have fun and keep cooking! Email questions and comments to whatscookin@independentfreepress.com Asian Cucumber Noodles Ingredients · 2 English cucumbers, peeled and seeded · 1 tsp salt · 3 tbsp sesame oil · 2 tbsp lime juice · 1 tsp fish sauce · 2 tbsp soy sauce · 1/4 tsp sambal olek · 1 tbsp toasted sesame seeds · 1 green onion, chopped · 4 red chili peppers, washed and left whole · fresh cilantro leaves Method Slice cucumber lengthwise into spaghetti-like strips using a zester or mandolin. Place cucumber in colander and sprinkle with salt. Let stand for 1 hour. Rinse well, drain and pat dry. Combine sesame oil, lime juice, fish sauce, soy sauce, sambal olek and sesame seeds in a large bowl. Add cucumber and toss. Let marinate for one hour. To serve, twist cucumber "spaghetti" around a fork and place on serving plates. Garnish with green onion, whole chilis and fresh cilantro. Serves four.
