What's Cookin': Tips to select the perfect avocado Happy Canada Day! We have a wonderfully delicious and easy recipe for you today that you may want to make and enjoy at some of your festivities this weekend. But first you need to know how to pick an avocado. When the avocado is unripe, it is very hard and the exterior skin is green. As the avocado becomes riper, the flesh softens and the skin darkens until eventually it is black. When you are planning to make a dish with avocadoes, you often need to think about it a few days in advance, because it could take that long for them to ripen properly. When you are looking for the avocado, choose one that is firm, but ever so slightly yielding to the pressure of your thumb. This means that is probably only 1-2 days away from perfect ripeness. Also choose one that has the little stem-bit still attached at the top of the avocado. This will ensure that the avocado is having as little air as possible exposed to the inside. If you need to speed up the ripen- the Cellar Restaurant Steak and Seafood 19 Independent & Free Press, Thursday, June 30, 2011 Lori Gysel & Gerry Kentner ing procedure, then when you get your avocadoes home, either place them in a brown paper bag with a really ripe banana and/or apple, then seal the bag and place in a warmish dark place. Or, you can bury the avocadoes in a bag of rice, then again, place them in a warmish dark place. If the avocado is ripening too fast, you can drastically reduce the rate of ripening by putting the avocadoes in the refrigerator. Just remember to bring them out and let them come up to room temperature before making this salad. They have much more flavour at room temperature than when they are cold. Have fun and keep cooking!
