I saw some ripe bananas on the counter last week and decided to make a banana loaf by my usual tried and true recipe. I have been making it so years, so much so, that this recipe is one that I never need to look up-- I've made it that often. But, I recently had seen some different recipes, so I decided to try some different ingredients (a combination of several recipes). Why don't you try them both out and let us know what you think. I'm thinking that the new one is right up there and may even be Lori Gysel & Gerry Kentner my new favorite. It is lighter (more eggs and yogurt/butter instead of oil). And it has more defined banana flavour (due to the one extra banana). Have fun and keep cooking! Questions and comments to Lori and Gerry can be sent to whatscooking@ theifp.ca Banana Bread (original recipe) Ingredients · 3 ripe bananas, mashed · 1/3 cup vegetable oil · 1/2 cup sugar · 1 egg · 1 1/2 cups all purpose flour · 1 tsp baking powder · 1 tsp baking soda · 1/2 tsp salt · 2/3 cup raisins Method 1. Preheat oven to 350 degrees F. Grease loaf pan. To mashed banana add oil and sugar. Blend well. Stir in egg. Mix dry ingredients together in a separate bowl. Then add dry ingredients to wet, blending in just until moistened. Add raisins and mix gently. Pour into greased pan and bake for 50-60 minutes. Banana Bread (revised recipe) Ingredients · 1 1/2 cups (3-4 ripe) bananas, mashed · 1/3 cup plain yogurt · 1/4 cup softened butter · 1/2 cup sugar · 2 eggs · 2 cups all purpose flour · 1 tsp baking powder · 1 tsp baking soda · 1/2 tsp salt · 1/3 cup chopped pecans · 1/3 cup mini chocolate chips Method Preheat oven to 350 degrees F. Grease loaf pan. To mashed banana add yogurt, butter and sugar. Blend well. Stir in egg. Mix dry ingredients together in a separate bowl. Then add dry ingredients to wet, blending in just until moistened. Add nuts and chocolate chips and mix gently. Pour into greased pan and bake for 60-70 minutes. First Acton Together event was a success By ALISON HILBORN Acton Community Hub co-ordinator The first Acton Together Dinner and a Movie Night was a huge success! There was a record number of folks of all ages, out to St. Alban's Anglican Church, 19 St. Alban Dr., for a delicious dinner and a great time of socializing, served up by some amazing volunteers. Following dinner, people strolled through downtown Acton to The Roxy on Mill St. to catch a movie. The Roxy provided the space, Acton Optical provided the popcorn and Giant Tiger provided the drinks. The cost of the movie was covered by a new initiative called "Acton Together". More than 80 people attended the event. (a short walk) where a movie (Cars 2) suitable for all ages will be shown starting at 7:30 p.m. Please note the church has a few stairs to the eating area.
