Page 22 Happy Holidays Book · Georgetown & Acton · November 2011 T hinking of You Chef Jenny's Almond-Cinnamon Truffles These sweet & delicious bites contain no refined sugars, dairy or gluten and make a perfect healtful dessert or mid-day pick-me-up! Makes 2 dozen cherry-sized truffles Prep Time: 10 minutes Cook Time: 0 minutes Ingredients: 1 cup whole pitted dates 1/2 cup natural almond butter 1/4 cup organic coconut plus 1/2 cup for rolling 1 tbsp ground cinnamon plus 1 tbsp for rolling 2 tbsp raw honey Directions: 1. Place dates in small saucepan and add enough water to barely cover. Over medium heat, bring dates & water to a boil. Remove from heat and let stand for 10 minutes. 2. In food processor or blender, combine softened dates, almond butter, 1/4 cup coconut, 1 tbsp cinnamon and honey. Process until smooth, stoping to scrape down sides if required. 3. Combine remaining 1/2 cup coconut and 1 tbsp cinnamon in medium bowl. Scoop out 2 tsp of date mixture and roll into a small ball. Roll in coconut/cinnamon mixture to coat. 4. Refrigerate until firm. Store tightly covered in fridge for up to 1 week (if they last that long!)
