Limehouse Hall to host Corn Roast Sept. 14 What's Cookin': The convenience of ready-made puff pastry In case you haven't worked with puff pastry before, let me tell you a little bit about it. Puff pastry is made by layering the pastry dough with fat (either butter, shortening or lard) many times until it ultimately has about 80 layers. It is the melt- ing of the fat and evaporation of water between these layers when in the offi ce that causes air pockets to rise and the pas- try to rise. Most puff pastry comes in a frozen block. You must thaw it in the fridge overnight, then as- suming you have quite a large counter, you then sprinkle with fl our and roll it out-- but don't roll it too thin or it won't work. And, if you make a mistake, you can't just scrunch it up in a ball and start again, otherwise, the integrity of the layers will be compromised and it won't rise properly in the oven. The solution? Buy President's Choice Butter Puff Pastry. It is the only brand that I know of that is made this way and is, in my opinion, one of the best products they've ever come out with. It comes frozen (in the sec- tion where you fi nd frozen pie shells), but it is already rolled out for you. So, you can thaw overnight in the fridge or on the counter for a short while. Then open the package-- inside you have two rolls of pastry that you simply unroll and use. There is no fl our, rolling pin and no error as to the cor- rect thickness of the dough. So simple! And, as a little bonus, the pastry is rolled in parch- ment paper, so you can actually use that same parchment paper to bake your creations on-- no need to buy it separately from the store. Once thawed, this product only lasts in your fridge for a short while and does not re- freeze well. So, I would suggest considering whether you need both rolls in the box or just one and taking only what you need out of the freezer. Or, if you do end up with a little leftover, cut in strips and roll in cinnamon sugar, then bake-- what a yummy treat to go with a cup of tea. Have fun and keep cooking! Lori Gysel & Gerry Kentner Makes 8 Ingredients • 1 pkg President's Choice Butter Puff Pastry, thawed • 3 tbsp melted butter • 1 pint blueberries • 3 tbsp sugar • 1 tbsp fl our • 1 tsp fresh lemon juice • 1/4 tsp ground cinnamon • Garnish with icing sugar if desired Method 1. Unroll puff pastry sheets and cut each sheet into four rounds, about 5" in diameter. Place on a baking sheet and brush with melted butter. 2. Mix remaining ingredients, then divide among the centres of the pastry rounds. 3. Bring pastry edges up and over the berries, leaving a toonie-sized opening. 4. Brush pastry with any re- maining butter. 5. Bake in 400 degree F oven approximately 20-25 minutes until puffed and golden. Gar- nish with icing sugar sprinkled through a strainer if desired.
