LEASEOR FINANCE STARTING FROM ORGET UPTO $5000�0.99APR% Recipe courtesy of Angela Dadd Serves 6-8 Ingredients • 2-3 cloves garlic chopped • 1 tbsp. chopped fresh ginger • 2 lb. butternut squash, peeled, seeded and cut into chunks • 2 onions, peeled and cut into quarters • 1 fresh chili pepper chopped • 2 diced fresh tomatoes, or 1 cup tomato juice • 2 tbsp. peanut oil or coconut oil • 1 tsp. kosher salt • 1 tbsp. Red Thai curry paste or Indian curry paste • 4 cups vegetable stock or water • Three quarters cup coconut milk • 1/2 cup peanut butter • Salt and pepper to taste Garnish • 1/2 cup roasted peanuts, coarsely chopped • 2 tbsp. coconut milk Method Heat oil in a large sauce pan over high heat. Add onion, chili and squash, cook until softened. Add gar- lic and ginger cook 1-2 minutes until fragrant then add tomatoes, curry paste and vegetable stock. Bring to a boil and reduce to a simmer. Cook until the vegetables are tender. Transfer the vegetables to a food processor and puree until smooth. Return puree to the pan and add co- conut milk. Thin the peanut butter with some of the hot soup and stir into the pan. Season with salt and pepper. Serve with roasted peanuts and a driz- zle of coconut milk. As promised, here is Angela Dadd's recipe for Curried Butternut Squash and Peanut Soup. I have made it a few times-- it is hearty and delicious. Just for fun, I made it the other day and used half butternut squash and half sweet potato, just because I had some sweet potato to use up. It was great.
