Every year, Dave and Gerry host a Canada Day party. This fantastic platter of treats was brought to the party by Gerry's long time friend, Kay d'Entremont. This was the biggest hit at last year's par- ty- thanks Kay! What a simple, fresh, wonderful idea. All you have to do is cut slices of seedless watermelon, then use a cookie cutter to cut shapes. You can cut circles as you see in the photo, or you could step out of the box even more and try using a maple leaf shaped cook- ie cutter! The key is, these are bite sized hors d'oeuvre, so you don't want to big a piece of wa- termelon. Once you've got that done, they just slice a bit of good quality feta cheese and place on top of the watermelon. Top that off with a Canada Day tooth- pick- and you're all set for your very own Canada Day party! If you'd like to use the same fla- vours, but make it into a salad, you can cut cubes of watermelon and combine with small cubes of feta, a few small amount of thinly sliced red on- ion, some fresh basil leaves, just torn and tossed into the salad, coarse salt, fresh- ly ground black pepper and good quality olive oil drizzled over the whole thing. Also a fresh and deli- cious change to the everyday salads. Happy Canada Day everyone- have fun and keep cooking!
