Mike spends his spare time cooking up a storm and every once in a while he's kind enough to share his creations with us. This recipe is delicious- he brought them in one day and I think I made a total disgrace of myself by eating two or three over the course of the day! They are great and well worth trying out. Cinnamon Doughnut Muffins Ingredients Muffins • 2 and 3/4 cups all-purpose flour • 1 cup sugar • 1/4 cup cornstarch • 1 tablespoon baking powder • 1 teaspoon salt • 1/2 teaspoon ground nutmeg • 1/4 teaspoon cinnamon • pinch of mace • 1/4 teaspoon LorAnn apple flavouring (available at Golda's Kitchen) • 1 cup buttermilk • 1/2 cup unsalted butter, melted • 2 large eggs, plus 1 large yolk Coating • 1 and 1/2 cups sugar • 1 tablespoon + 1 teaspoon ground cinnamon • pinch each of nutmeg and mace • 3/4 cups unsalted butter, melted Method Muffins Adjust oven rack to middle position and pre-heat oven to 410 F degrees. Spray 12-cup muffin tin with vegeta- ble oil spray. Whisk flour, sugar, cornstarch, baking powder, salt, nutmeg, cinnamon & mace together in bowl. Whisk buttermilk, melted butter, eggs and egg yolk together in separate bowl. Add wet ingredients to dry ingredi- ents and stir with rubber spatula until just combined. Scoop the batter evenly into prepared tin. Bake until muffins are light brown and slightly crusty, and toothpick insert- ed in center comes out clean, about 20 minutes. Let muf- fins cool in tin for five minutes be- fore remov- ing and pro- ceeding with the coating process. Coating Whisk sugar and cinnamon together in bowl. Remove muffins from tin and working with 1 muffin at a time, brush all over liberally with melted butter, then roll in cinnamon sugar to coat complete- ly, pressing lightly to adhere. Transfer to wire rack and let cool for 15 minutes before serving. Please note that the above recipe is for large muffins. For smaller muffins baked in a 24 cup muffin tin, make the following adjustment: Bake for 16 minutes instead of 20, with the first 8 minutes on regular bake and the last 8 minutes on convection bake.
