Coconut Apricot Coffee Cake Ingredients • 8 oz soft cream cheese • 1/2 cup butter, softened • 1 cup sugar • 2 eggs • 1 tsp vanilla • 1 3/4 cups fl our • 1 tsp baking powder • 1/2 tsp baking soda • 1/4 tsp salt • 1 cup apricot jam Topping: • 2 cups coconut • 2/3 cup brown sugar • 1 tsp cinnamon • 1/3 cup melted butter Method 1. Preheat oven to 350F degrees. Grease a 9"x9" baking pan. 2. Cream cream cheese and butter. Add sugar and mix well. Add eggs and vanilla, mix and set aside. 3. In a separate bowl, blend fl our, baking powder, baking soda and salt. 4. Add dry ingredients to cheese mixture and mix until just combined. 5. Pour half of the batter into the greased pan. Dot evenly with apricot jam. Then top with remaining butter. 6. Bake approxi- mately 40 minutes, until cake tester comes out clean. 7. Mix topping in- gredients and sprinkle over cake and bake an- other 10 minutes. Chef's note: a good substitute for the apricot jam is peach jam or marmalade. Gerry is writing today… As you can see by this photo, half the cake is gone! You see, I had a hankering for a cof- fee cake and as I was having some friends over for an afternoon of volunteer work, I felt they deserved an afternoon break with a treat. It was 11 a.m. and they were arriving at 1 p.m. and I hadn't even decided on a recipe. So, I checked out my recipe box and chose this one, mostly because of the ingredients I had on hand. About 3 p.m., four of us had a coffee cake break. Then, my grandson, Michael came over to cut the lawn and share supper, after which, he had a little taste. Then, later in the evening at coffee and scrabble time, Dave enjoyed a BIG piece. That's when I decided I had better get the photo taken before it was too late! The next morning we had friends over for a coffee and that was the end of the coffee cake. I know there is only two of us living here, but we have a revolving door for family and friends and they all seem to sense when something fra- grant is coming out of my oven!
