Raspberry Swirl Cookies Makes 5 dozen Ingredients • 3 and 1/4 cups flour • 1 tsp baking soda • 1 tsp salt • 1/2 cup shortening • 1/2 cup butter • 1 cup brown sugar • 3/4 cup sugar • 2 eggs • 1/2 cup water • 1 tsp almond flavouring (optional - can use vanilla) • 2 cups coconut (optional) • raspberry (or any red) jam Method 1. Mix flour, soda and salt. Set aside. 2. Cream shortening, butter and sugars until creamy. Add eggs one at a time. 3. Add water and fla- vouring to butter mixture. Blend in flour mixture and coconut. 4. Drop by the table- spoonful onto greased cookie sheet. Make a little dent in the dough with your finger. Put one quarter tsp of jam in the de- pression, daub a little batter on top. 5. Bake at 400 degrees F. for 10 minutes.
