COMMENT Aloo tikki are a party offering for the vegans in the crowd For all of you who will be hosting events with vegetarians or vegans present, here is a fantastic recipe. Aloo tikki are basical- ly the Indian version of potato pancakes. They can be served as a meal or as a little appetizer. If you want to serve them as a meal, they are, in my opinion, best served on a bed of chana masala with all the gar- nishes listed on the recipe on top! Obvi- ously if you've got vegans in the crowd you need to use cashew cream, not sour cream (recipe for cashew cream coming up next week). If you want to serve them as an appe- tizer, you can put a little of the cashew cream on top of each one, then a little of the chopped toppings, or you could serve them with a mango chutney or tamarind sauce would be nice. The recipe calls for amchoor powder. Some of the grocery stores carry it-- in the ethnic section, not necessarily the regular spice section. But wherever you get it, don't skip it in the recipe-- it adds a distinctive kick that makes the patties taste different from any other potato pat- ties you may have had before. Have fun and keep cooking! Makes 12 small patties INGREDIENTS • 6 medium yellow or white fleshed potatoes • 1 tbsp vegetable oil • 1 tbsp brown mustard seeds •1 large onion, diced • 1/2 tsp salt • pinch cayenne pepper • 1 tsp amchoor (dried mango powder) • 1/4 cup chopped fresh cilantro • vegetable oil for frying Garnish: chopped cilantro, finely diced red onion, finely diced jalepeno pepper, thinly sliced green onion, sour cream or cashew cream METHOD 1. Boil potatoes until soft, then peel the skin and mash thoroughly with potato masher. 2. In a fry pan, heat oil. Add mustard seeds and let them roast for a few seconds. Add diced onion and cook until onions are soft and translucent. 3. Add salt, amchoor and cayenne. Cook for another minute. Remove from heat. Add mashed potatoes and cilantro. Mix well. 4. Form into patties, then flatten into patties. 5. In a clean pan, heat a couple table- spoons of oil until hot. Add patties and fry until golden brown on one side, then flip and fry till brown on other side. 6. Repeat until all patties are fried. Keep warm in a 300 degree F. oven while cook- ing other patties. 7. Serve patties as they are with any or all of the listed garnishes or serve the pat- ties over a bed of chana masala with the toppings! What's Cookin' Aloo Tikki Great to see you all!
