serve when guests are being entertain ed here are two recipes that will quickly answer this vexing question hollywood salad serves 1 large orange lettuce vi banana 2 tablespoons finely chopped nuts next year if wcre all spared to at tend the fair i suppose if we want to meet our friends downtown well be saying met us at the y m ca the editor was showing me a picture of the acton public school scholars of 1871 the other day and told me it was going to be printed in the fuee press i had difficulty in picking out a lot of the faces and recalling the names ol those boys and girls of over sixty years ago but that photograph did recall former days and associations id be glad if some of you folks who read this would set down and write me and tell me who all you can recall in this pic ture i doubt very much if any at present living can recall all the names in the group well i must cease this rambling about fall fairs y m c a and old school days i hope to meet you all on acton fair days next week g chocolate junket with banana whip 1 package powder for chocolate junket 1 pint milk 3 bananas 1 egg white 4 cup sugar 1 teaspoon lemon juice slice 2 bananas into dessert glasses warm the milk until lukewarm not hot and dissolve the powder for chocolate junket in it pour the junket over the bananas let etand in warm room until set chill in refrigerator when ready to serve mash the remaining banana add egg whit sugar and lemon juice beating until twk add as topping to the junket oranqe m2otngtte pie makes pie 1 cup sugar va cup flour a teaspoon salt orated rind 1 orange 1 cupozange juice 2 tablespoons lemon juice mix dry ingredients add fruit juices and cook in double boiler 10 minutes stirring until thickened add 2 tablespoons butter 3 egg yolks beaten light cook 2 minutes longer cool and turn into either a baked or crumb crust pie shell cover with meringue made of 3 egg whites 6 tablespoons sugar teaspoon baking powder beat egg whites until frothy add sugar and baking powder and continue beat ing until stiff put into moderate oven for 10 minutes to brown if desired strips of candled orange peel may be laid over meringue for decoration cojpred peel is very at- tractive bavarian cream serves 68 1 tablespoon granulated gelatine vi cup cold water 1 cup orange jufce and pulp 1 tablespoon lemon juice cup sugar sprinkling salt lcup cream soak gelatine in cold water for 5 minutes and dissolve by standing cup containing mixture in hot water add to orange juice and pulp add lemon juice sugar and milt wbeen it begins home is where your heart is with that i quite agree that means where your ain folk dwell for there your thoughts will be your feet may go astraylng forever and a day adventuring down luring roads a thousand leagues away you may find fame youth or lifes last gloaming your thoughts will still go homing where your aln folk be my oh my but there seems to be no lack of subjects to write about this week when time can be spared to keep away from the community centre of interest at the new y m c a building on mill street i am just like all the other chaps old and young- about town i like to see signs of actons uphildlng and im provement and when operations really get under way im just as anxious to see things move along and watch the pro gress but before i launch into that subject im reminded by a number of posters and other means that acton great an nual fair is next week on tuesday and wednesday to be exact already the homecoming for this big event is start ed and im told that jock agnew from winnipeg was the first to arrive with the object in view of renewing old ac quaintances and taking in acton fair no doubt there are many others who will be arriving during the week arid others are making arrangements to be here during the fair days from shorter distances its a great gathering time and we who have remained in the old home town are always glad to welcome all visitors back to the old homenest- for the fair or at any other time but it does seem that the fair days are the best for all to gather here im looking forward to those days next week and wind and weather permitting mary and i will be on hand along with all other loyal actonians but the fair of 1934 will not resemble very much the ones of half a century ago that some of the oldtimers used to attend then the big interest was in the exhibit of live stock that fea ture is still a prominent part of the fair but there isnt the time spent oyer the sheep and hog pens that there used to be in those days when the placing of the stock was just as big a conest as any race times have changed but the fall fair in acton still seems to hold its placerand keep growing well be watching for you next week at this great meeting place ttl ftf gs at like himself lucky his job is something for which to be thankful five years ago who thought of a comfortable home or a bountiful table as grounds for thankful ness people took such comforts as a matter of course he must be a very thoughtless individual however who now sits down to a square meal without thinking of the many who are less for tune it seems a pity that we should learn appreciation of- our blessings either by losing them or by fearing their loss in good times as well as bad we should keep before us the realization that a stupdendous stroke of luck is not neces sary to make us fortunate that the small favors are a reason for thank fulness controlling potato tuber diseases diseased potato tubers are undesirable for marketing purposes because diseased stock may rot in storage or in transit necessitating sales at discount prices or possible disqualification as a ccmse- quence consumers costs are increased while the growers profits are lowered accordingly surpassing these difficul ties met in the marketing phase of this industry in canada however is the more serious problem arising from the use of diseased potatoes for seed a prac tice leading to seedpiece rot weak ger mination poor stands and low yields moreover the use of diseased seed tubors results in contamination of the soil thus making it most difficult if not lmpos slble to produce diseasefree potatoes on the same location for several years the importance of this principle is better appreciated when it is known that new iandts relatively free from disease organisms and should be safeguarded against- contamination in seeking to control potato tuber diseases it is well to know that a number of them attack both tubers and tops so that they must be dealt with in the seed stock supply and in the field those diseases con fined to the tubers alone necessitate such measures as seed treatment soil treatment and seed all of which are being investigated toy the division of botany of the dominion expeilmental farms through its branch laboratories although such practices are subject to limitations when carefully conducted they provide a means of bettering crop production and of reduc ing very materially the otherwise ap preciable losses it must be clearly understood thajt seed treatment will not prevent disease originating in the soil under these circumstances a scheme of soil treatment or soil management is a distinct advantage seed treatment of course can only bo effective against diseases occurring on the surface of the potato tubers whereas the more deeply seated infections notably late blight rot black leg and fusarium rot cannot be reached by seed treatment in these instances the correct preventive measure is to avoid using the diseased tubers certain diseases such as leaf roll mosaic and spindle tuber cannot be de tected in the seedtubers although they give rise to definite symptoms in the growing tops the eradication of these disorders caxtbettceompllshed only by a system of thoroughly rogulhg combined with the operation of a tuberunit seed- plot detailed information on the subject under consideration may be secured from the nearest- dominion laboratory of plant
