Although he is given credit of inventing Champagne, it is believed today that Champagne was actually invented 200 years earlier. What Dom the Monk in fact should get credit for, is the art of blending different colored grapes, the cuvee, and for inventing thickâ€"walled glass bottles with corks as we know them today. With a glass of Mumm Champagne, I am contemplating the past; is there anything that is conâ€" nected to so much history or is more dependant on times gone by than is wine? Back in 1827, four Germans entered into a partnership and named their new winery, P.A. Mumm Co. Little did they know, however, what turbulent times lay before them, but wars and time alone could not even change the company and today the Mumm Champagne House is still one of the largest producers of quality Champagne in France. the year before, this one has a reâ€" enforced concrete cellar that had been used as an observation post by the allied forces, but little evidence remains and I see only neat vineâ€" yards blow me now as I look out through the narrow slots in the thick stone walls. _ JURASSIC PARK == Ees DRAGON === In the past, Mumm, like the other Champagne houses, still turned all their bottles by hand. This "ridâ€" dling" has largely been taken over today by computerâ€"controlled equipment, much more efficient and exact than human hands can proâ€" vide, but also much more cost effecâ€" tive. It is only the best wine and the oddâ€"shaped bottles that need the care of the riddlers, a tradition which will hopefully live on for many generations to come. Much of the old traditional work has been replaced by more modern methods, but the timeâ€"honored blending as devised by the monk over 300 years ago is still carried out today.
