Rosé perfect summer wine If there is such a thing as a perfect summer wine, the distinction surely must go to those wines which we simply call "Rose." Yet in spite of our hot and humid summers, in a nation unable to exist without the eternal barbecue, rose wines enjoy very little success. There are many reasons for the wine‘s dismal showing. In my mind it is the fact that we do not know enough about roses and that we are very conservative and hesitate about trying new wines. This explains why the rose wines have a difficult time meeting their quotas to remain listed in Ontario. I fully realize that many of us started drinking wine a good many years ago by ordering that semiâ€" sweet European wine that comes in funny shaped bottles. We too, here in Ontario produced many rose wines, wines which were even inferior to those in the funny bottles. Then came California with their blush wines and SUNDAY EUCHARISTS 8:00, 9:00, 10:30 a.m. (Morning Prayer on 2nd 4th Sundays at 10:30 a.m.) WEDNESDAY EUCHARIST at 10:30 a.m. Clergy: Canon Alex Hewitt, Rector Rev. While there are still inferior rose wines, and blush wines are nothing but Californian rose wines, there are still some really good rose wines around. Even the blush and the ones in the funny bottles have drastically improved their quality. If we only dared to try them once again! A rose is never just a mixture of white and red wines, which is prohibâ€" ited by law in most countries. They are rather a mix of red and white grapes or their juice before fermentaâ€" tion. Although rose is usually made from red grapes, some of the better wines also have a small percentage of Baby Nursery available during services Mon.â€"Fri. After at least two hours of fermentation with the skins in the must, the winemaker turns the tap on at the bottom of the vat and runs the juice at intervals until it simply becomes too dark to be called a rose. white grapes added to the red. A variety of techniques are used today for producing rose winesâ€"but pressing red grapes as soon as they are picked and separating the must from the stems and skins before ferâ€" mentation starts, is usually the most acceptable method. Be somewhat adventurous and give them another try. Served cold they are just perfect in the summer.
