The Harvest Kitchen, 134 Thomas St., was lucky to entice the Oakville born and raised Henley back home, one evening a week, to teach cooking classes. The course costs $45 per person. Her threeâ€" hour classes, starting at 7 p.m., runs to Dec. 8th. Each week, Henley teaches a difâ€" ferent fare, tastefully naming her menued classes â€" Louisiana Cooking, Exotic Thai, Perfect Pasta, Scrumptious Side Dishes, Stick To Your Ribs Stew and Soups, Perfect Pastry and Decadent Desserts, to name a few. All lessons include instruction demonstration, participation, tastings, and takeâ€" home recipe booklets. Henley studied hotel and food administration at the University of Guelph, then graduated from chef school at George Brown College in Toronto. She apprenticed with interâ€" nationally renowned chef â€" Joseph Von Lanthen â€" at the Regal Constellation Hotel before embarkâ€" ing on an "eating tour of Europe." "I had a really good teacher in Von Lanthen. He passed the logic, business, and love for the art of cooking on to me, and in turn, I hope to pass this on to my stuâ€" dents," says Henley. She adds, "As a chef, I‘ve spent thousands upon thousands of hours in the kitchen.
