Whether it's for a daughter, girlfriend, wife or even boyfriend or husband, chocolate seems to be a universally accepted way of saying "I love you" come the 14th of February. A great way to express your love and admiration is by heading into the kitchen yourself and trying your hand at cooking up something for that special someone in your life. ROCKY RECCHIUTI BROWNIES Makes 16 Brownies 51/2 ounces 100 % unsweetened chocolate, coarsely chopped, divided 10 tablespoons (5 ounces) unsalted butter with 82 percent butterfat, cut into 1-inch slices 2/3 cup unbleached all-purpose flour 1/2 teaspoon all kosher salt 3 extra-large eggs at room temperature 1 teaspoon pure vanilla extract, preferably Madagascar Bourbon 11/3 cups granulated cane sugar 1/3 cup walnut halves, roasted and roughly chopped 6 marshmallows, each 11/2 inches square, cut into quarters Preheat oven to 325 F. Line bottom of 8-inch-square pan with parchment paper, liberally coat paper and pan sides with vegetable oil. Put 3 ounces of chocolate and butter in medium stainless-steel bowl, set over pot of simmering water. Heat, stirring, until chocolate and butter melt, are fully combined and mixture is smooth. Lift bowl from pot. Set aside. Sift flower and salt into a bowl. In another bowl, combine eggs, vanilla extract and whisk together by hand until blended. Whisk in sugar. Whisk egg mixture into chocolate. Add flour and remaining 21/2 ounces of chocolate to the batter and, using a rubber spatula, mix well. Mix in walnuts. Put batter into prepared pan. Spread evenly with small offset spatula. Scatter marshmallow pieces evenly over surface, push halfway into batter. The tops should remain uncovered. Bake on middle shelf of oven until marshmallows are browned and a skewer inserted into center of brownie sheet comes out with some batter clinging to it, about 45 minutes. Let cool completely in the pan, thencover with plastic wrap and refrigerate until cold. Run a knife around edge of pan to loosen sides of brownie, and slide brownie, still on paper, onto a work surface, cut and enjoy!
