E., Oakville Ontario, (905) 8459818, or visit their website at www.lsofia.com Black Sea Bass Recipe for 1 order Ingredients: 2 4oz sea bass filets 1/2 small zucchini (cut into batons) 1 Japanese eggplant (large diced) 1 plum tomato 1 tbsp capers 1 tsp chopped garlic 3 fresh basil leaves (roughly chopped) 1 heaping tbsp crumbled feta cheese 3 tbsp olive oil 1/2 cup canola oil 1 tbsp olive tapenade (homemade/store bought) 2 tbsp balsamic vinager Salt and pepper 2 lemon wedges 1. Marinate sea bass in 1 tbsp olive oil and 1 tbsp balsamic, half the garlic and a pinch of pepper. 2. Heat canola oil in large saucepan. Brown eggplant and with slotted spoon, remove from oil and put on a plate with paper towel to absorb extra oil. Brown zucchini and tomatoes the same way. 3. In a small mixing bowl put together the remaining olive oil, capers, garlic, basil, feta and balsamic vinager. Add the cooked vegetables and mix together. Put aside. 4. Grill sea bass until flaky. Only turn once. This will ensure the crispiness and black colour. 5. Plate the vegetables followed by the sea bass on top. Drizzle with remaining vegetab;e;e marinade and plate the lemon wedge.
