The description of each of the five courses alone will make your tastebuds stand up and demand immediate delivery of the delectable dishes. Culinary craving aside, the accompanying wine list is equally as impressive. Put these all together and this meal is sure to be a night to remember for the body, mind and soul. Diners will be taken on a tour of Veneto, Italy with wines from Luigi Righetti, while Paradiso Chef Matt Tait prepares the perfectly suited Italian fare to make the vintage pop. From the get-go the menu is poetry for the palate. The starter is proscuitto wrapped tiger shrimp with charred treviso radicchio, roasted red peppers and artichoke relish, as well as crispy polenta. Its wine mate is Bianco Di Custoz 2006. The middle of the meal features eight-hour braised beef short ribs with rici e bisi, cardamom roasted young carrots and "Sognum" reduction. Appropriately Veneto's own Cabernet Sauvignon 'Sognum' 2004 is partnered with this pårt of the meal. To finish it all off is Tiramisu e Cioccoloto with Valpolicella-Espresso syrup and golden caramel glass, which is matched with Recioto della Valpolicella 2004.
